It is slowly but surely getting colder, swimming season is coming to an end and for us students the easy life is officially over. At the beginning of summer it seemed as if we had all the time in the world, three months of freedom, three months of sun, three months of doing nothing. However, just like every year the summer was over in no time at all and the autumn semester has already been going for an entire week. The first few weeks are still easygoing, some days we prefer sitting outside instead of going to afternoon lectures. The exams are still months away and deadlines don’t seem forever away.
I actually don’t have any lectures this year, however a bachelor thesis, which I am supposed to finish within the next two and a half months. And although I tell myself to go to the library every single day, I already know that I’ll have a hard time to actually do so. Between three and four in the afternoon I usually have a low, I need coffee, a snack, something that is going to bring me back to life. Since I know that if I don’t have a little pick-up then and there it’s only going to be downhill from there I am usually prepped and have a snack ready to go. I prefer nuts and dried fruit as the last a long time and are delicious nonetheless. After one of those said snacks I am usually able to get going for another hour or so until I need to get out and call it a day.

This week’s snack of choice are those fruity energy bites, which I made from dried apricots, shredded coconut, oats, pistachios and cranberries. I got inspired by Seeberger’s product range for this recipe. Seeberger is a German company selling dried fruit, nuts, seeds, coffee and tea. Their products are available at Coop supermarkets in Switzerland. Seeberger is a family business and they are already celebrating their 175th anniversary this year.
- Energie-Bites:
- 100g dried apricots
- 30g cranberries
- 3 El chia seed
- 30g pistachios
- 50g oats
- 50g shredded coconut
- 25g coconut oil
- 2 tbs cashew butter*
- ⅛ tsp vanilla
- Decoration:
- 60g dark chocolate
- 30g pistachios, roughly chopped
- 2 tbs shredded coconut
- Add all ingredients for the energy bites into a food processor and process until it reaches a dough-like consistency. The dough should be mouldable but still chunky.
- Press the mixture into a baking sheet into a 1 cm thick square (15x15cm). Let set in the freezer for 30 minutes.
- Melt chocolate, meanwhile mix chopped pistachios and shredded coconut in a small bowl or on a small plate.
- Take the square out of the freezer and cut into 8 equally sized bars. Cover one end of the bar with chocolate and cover with the coconut and pistachio mixture.
- Place in the fridge to set. Store in the fridge or freezer. The energy bites will last for about 2 weeks in the fridge. *Cashew butter can be replaced with almond butter or peanut butter.
