Having people over for dinner can sometimes be a little stressful. Of course you want to spend as much time with your guests as possible, yet you still want to impress them with a delicious meal. They might have even come over spontaneously and you didn’t have time to prepare a fancy three course meal. That is when I like reaching for the quickest and most simple recipes. One of those is a roasted fruit salad for dessert. It is so easy to make and I actually feel slightly silly posting this recipe as you literally just need fruit. And an oven. Oh and a sprinkle of vanilla and maybe a few nuts, but this is actually totally optional.
The key to this recipe is the roasting and the usage of incredibly ripe and therefore sweet fruit. I mean the fresh fruit itself is already incredibly delicisou but roasting it just brings out the flavours even more, sooo tasty. You can serve this on its own or with a dollop of either some sort of yogurt or ice cream to make it even more delicious.
- 3-4 figs
- 3 plums
- 1 nectarine
- seeds of ¼ pomegranate
- a dash of vanille
- agave
- 1 tbs chopped nuts
- Preheat oven to 180°C.
- Cut the figs and the nectarine into slices and halve the plums.
- Add the figs and nectarine slices, the plum halves and the pomegranate kernels into a casserole dish and add a dash of vanilla, mix well and then place it in the preheated oven for 15 minutes until the fruit has softened.
- When your fruit has finished baking drizzle with a little agave and top with the chopped hazelnuts. You can also toast the nuts prior to serving if you like. Last but not least serve with a dollop of soy yogurt, coconut yogurt or vanilla ice cream, what ever your heart desires.
