Tonight I was cooking for my little sister who came to visit me as I haven’t seen her in a while. Fortunately I still had a bunch of Schär products waiting to be used as I had just received a feel good box by Schär with a bunch of delicious products to try. Additionally to gluten-free bread and snacks by Schär there were also a bunch of fresh ingredients such as nuts, pumpkin, avocado, shredded coconut…
My sister and I wanted to spend a chill night in so I decided it was the perfect time for burgers, but of course not regular kind of burgers, nope, I decided to go all out and create a delightful Indian Spiced Chickpea Burger Pattie, which I served on Schär Mehrkornbrötchen ( little buns with a bunch of different seeds). I also prepared a sauce out of Mango Chutney, which can be found at most supermarkets and soy yogurt. Of course I also added a bunch of other toppings. I mean a burger without toppings is just half the fun, right?! Oh and I also decided to bake some pumpkin wedges as the Feel Good Box happened to come with a pumpkin as well. I decided to keep it simple and just drizzled it with coconut oil and agave and added a dash of salt. However, you could also make my Indian Roasted Carrots to have on the side.
The dinner I created was just perfect and my sister and I had a wonderful time catching up on things that had been going on in our lives. - 4 Mehrkornbrötchen by Schär
- 2tbs mango chutnes
- ⅓ cup soygurt
- 1.5 cup cooked chickpeas (240g)
- 3 tbs oats
- 3tbs shredded coconut
- 1 onion, finely chopped
- 1 clove of garlic, finely chopped
- 10g tbs coriander, finely chopped
- 1 tsp garam masala
- 1 tsp curry powder
- 1 tsp cumin
- 1 tsp salt
- coconut oil
- Mix the soy yogurt with the mango chutney and set aside for later.
- In a food processor blend the chickpeas, oats and shredded coconut until the mixture is fairly smooth.
- Add the chickpea mixture into a bowl and add the coriander, chopped onion, chopped garlic, coriander, garam masala, curry and salt. Knead the mixture together with your hands and shape into equally sized patties.
- Heat up some coconut oil in a pan and fry the patties on medium heat for five minutes on each side. Lastly toast your buns. Then Place some savoy cabbage on the toasted bun, add the chickpea patty, avocado, beetroot and lastly the yogurt mango sauce. Enjoy with baked pumpkin and a salad on the side.
