I noticed that I actually haven’t posted a granola recipe in the longest time. I actually also haven’t made granola in ages. I’ve just been a bit lazy and I kept reaching for store-bought versions. I mean there’s nothing wrong with that but homemade granola is just so much better! So this morning, a rainy Monday morning in June, I got up, went straight to the kitchen, preheated my oven and threw together a quick gluten-free chocolate granola. Chocolate granola is probably my favourite, I just really like chocolate. In fact, anything chocolate is usually my favourite. Chocolate cake, chocolate ice cream, chocolate yogurt…
I kept today’s granola recipe completely gluten-free by using millet flakes instead of oats. Other than that I added my two faves: puffed quinoa and amaranth. For sweetness I kept it simple and just used a bunch of super juicy dates I got at the Turkish supermarket the other day. Sounds pretty basic, right? Well this granola is indeed so basic and simple yet it tastes delicious and just makes the perfect quick and easy breakfast. Just add a dollop of soy yogurt, some fruit and your favourite milk and you’re all set or a delicious brekkie.
- 10 dates
- 3tbs cacao
- 1tbs melted coconut oil
- 3tbs water
- ½ cup puffed quinoa
- ½ cup puffed amaranth
- ½ cup millet flakes
- ½ cup hazelnuts
- Preheat oven to 150°.
- Roughly chop up the hazelnuts and add them together with the puffed quinoa, puffed amaranth and the millet flakes into a large mixing bowl.
- Pit the dates and add the dates, the melted coconut oil, cacao and the water into a blender and blend until smooth and creamy.
- When your date mixture is smooth and creamy transfer it into the bowl with the dry ingredients and mix until all the ingredients are covered in the chocolate mixture.
- Spread onto a lined baking tray and bake for 20 minutes.
- After 20 minutes remove your granola from the oven and let it cool completely. Then break it up into clusters and store it in an air-thight jar. Enjoy with your favourite milk, a handful of berries and a chopped banana.

Homemade granola tastes soooooo good! i purchase this brand Kith & Thyme every month or every other week or so, and they bake their batches freshly every morning! But I would love to try making my own sometime–especially one with chocolate! This is such a great recipe that looks so beautiful!
