Hey there!
Yes, I am still alive, yes I am still cooking. I really hope to get back to posting more regularly soon but as my exams are basically over I’ll be on holidays soon, hence I’ll have loads of time for cooking, baking and recipe developing, yaaay!
One of the things that has got me through my days in the recent weeks was my supersede porridge topped with whatever toppings I had on hand. I’ve spent most of my time in the library of my university over the past weeks so I needed to get a good and energising start to the day. Yep, I was in need of some ultimate brain food! When this is the case I usually go for porridge as it keeps me full for the longest. I am not saying I don’t like my smoothies but they don’t hold me over for so long. Anyways, I have been getting super bored of porridge made of oats and even my quinoa version started to annoy me so I decided to start adding linseed and chia seed as well as banana and raisins to my porridge. The seeds add a nice nutty flavour and make the porridge go all creamy and delicious and well their pretty food for your health as well so why not add a spoonful, right? The bananas and raisins, however, are the key to a super sweet and delicious porridge, mmmm. And trust me you won’t need to add any additional sweetener whatsoever.
This is really just a basic recipe which can be adapted to your tastebuds I just find this mixture the best one I have made so far. Plus it takes no time at all to make, yet it is still a tad more exciting than your ordinary pouch of quick oats you quickly throw in the microwave..
Anyways people, my exams are not over yet and I am supposed to study right now. So let’s get on to the recipe on how to create this amazing deliciousness.
Creamy, sweet, nutty, AMAZING! – my go-to supersede porridge:
- ¼ cup oats
- 1tsp chia seeds
- 1tsp flax seed
- ½ banana
- 1tsp raisins
- a dash of vanilla
- a dash of cinnamon
- OPTIONAL TOPPINGS:
- 1 mini banana
- ½ apple
- nut butter
- your favourite milk
- Chop the banana into small chunks.
- Add the chopped banana, oats, raisins, chia seed, flax seed, vanilla, cinnamon and ¾ cup of water into a small saucepan.
- Let the mixture come to a bubble and then lower the heat to low and let it cook for about five minutes while continuously stirring the mixture.
- After five minutes pour your mixture into a bowl and top with the toppings you like. I went for a fried mini banana, apple, some pumpkin seed butter and I also ended up adding some soy milk ( I did that after the photo was taken)
So peeps, to all of you uni students out there, good luck with the rest of your exams and to the rest of you enjoy your week!
Bisous,
