The other day I got home late after an evening run with the running group I go to and of course I was incredibly hungry. Whenever this happens I usually end up having smashed avo on toast as it it basically takes no time to make yet it is still tasty and filling. I usually spread a thin layer of vegemite onto my toast and then top it with the smashed avo, however, I couldn’t find my beloved jar of vegemite and reached for tahini instead. And oh my, what a great decision, tahini and avocado: a match made in heaven! I don’t know what it is but the nutty flavour of the tahini works incredibly well with the mild flavour of the avo and the combination is just divine.
Of course it was way to dark to take a picture back then so I decided to make this again and write down the recip for you, this time it was brunch. And I fancied it up a little with a topping of roasted balsamic figs which made this even tastier. The combination of sweet, savoury and the creaminess of the avocado create the most delicious flavour combination, mmmmm. I’m still dreaming of this.
By the way I used sourdough rye bread by John Baker, cause John Baker just sells the best bread in the entire city of Zurich, maybe even in the whole of Switzerland. And no I am not payed to say this. They don’t even know I bought this loaf of bread, nor do they know that I am mentionig it on here. Anyways, if you want the ultimate experience and you live in Zurich get your hands on John Baker bread, but by all means you can use any kind of bread. As long as you are not using white toast bread, cause that’s not bread. That’s just sponge pretending to be bread, eew!
- 2 slices of bread ( I used sourdough rye bread)
- ½ Avocado
- 1 tsp Tahini
- 1 tsp balsamic vinegar
- 2 figs
- ½ tbs sesame seeds, toasted
- 1 garlic clove
- salt
- agave
- a squeeze of lime juice
- Preheat oven to 180°C. Cur figs into eights and add them into a baking dish. Add balsamic and a dash of salt and mix well. Peal the garlic clove and rub it onto both sides of the bread, this just give it a nice flavour. Then place the figs in the oven and bake for eight to nine minutes. For the last two minutes of the baking time you can also place the bread in the oven to toast it. If you’ve got a toaster you could also use a toaster but I actually haven’t got a toaster.
- While the figs are baking and the bread is toasting, Roughly mash up the avocado with a fork, add the tahini, ½ tsp salt and a squeeze of lime juice. Mix well.
- When the bread has finished baking smother it with the avocado tahini cream, then place the figs on top and drizzle with agave. Last but not least add a sprinkle of toasted sesame seeds.
