Indian cuisine is one of my favourites. There’s is just something amazing about the comforting flavours of the combination of the many spices used. Even the smell of Indian food makes my mouth water. mmmmm delish. Spicy, flvaourful, slightly tangy and even a hint of sweetness, there’s nothing missing. I love the classic curries dishes with rice, however, I also love including similar flavour into different other dishes. In today’s recipe I am haring how I use my favourite curry paste as a marinade for carrots to create a wonderful explosion of tastes, carrots that melt in your mouth and come with the greates of flavours.

Ingredients
  • 10 carrots
  • 1 garlic clove
  • ½ small onion
  • 1 cm fresh ginger
  • 20 mint leaves
  • 1 tsp agave
  • 1 tbs coconutoil
  • 1 tbs garam masala
  • 2 tsp paprika
  • ½ tsp turmeric
  • 3 tbs soy yogurt
  • 1tbs lemon juice
  • 10 mint leaves
  • salt
Instructions
  1. Preheat your oven to 180°C. Wash your carrots and if they are not organic make sure to peal them. Mine were organic so I omitted that step.
  2. Peal the ginger, onion and garlic and add it into a food processor. Also add 10 of the mint leaves, agave, coconut oil, turmeric, paprika, garam masala and 1 teaspoon salt. Blend until the mixture has turned into a smooth paste. Massage your carrots with the paste and then place them on a baking tray.
  3. Bake the carrots for 50 minutes. Meanwhile you can prepare the yogurt sauce. For the sauce just add the soy yogurt, the remaining mint leaves, ¼ teaspoon of salt and the lemon juice into a blender and blend until smooth. Put aside for later.
  4. When your carrots have finished baking add drizzle them with the mint yogurt sauce and serve. Those carrots are a great side dish, however, you could also place them on a bed of greens and use the mint yogurt sauce as a dressing. Lastly you could toast some cashew and you’ve got yourself a delicious and nutritious salad.
