Hey there!
Pancakes are delicious, but you know what, coffee-choc hazelnut blueberry pancakes are even better! I always loved pancakes, however, the ones we usually eat here are a lot flatter and less airy then American pancakes. They’re more like crepes but still differet. However, I’ve recently started to enjoy slightly fluffier, smaller pancakes. I especially love making them on a slow Sunday morning. Of course I could just make super basic plain pancakes, however, that would be boring and bland and I don’t like boring and bland food. That is why I decided to create these babies. The combination of coffe, hazelnuts and chocolate is just amazing and the added blueberries give them a nice fruity tang, just DELICIOUS! Also I am pretty sure whoever you make these for will be pretty damn impressed even though they’re actually so easy to make and don’t even require any fancy ingredients.
So people, ready, set, pancake!
- 50g buckwheat flour
- 50g ground hazelnut
- 1 tsp baking powder
- 1 tbs cacao powder
- a dash of salt
- a dash of vanilla
- a handful of blueberries (approx. ¼ cup)
- 1 tbs agave
- 150ml soy milk
- 40ml espresso
- 1 tsp apple cider vinegar
- coconut oil
- Mix buckwheat flour, ground hazelnuts, baking powder, cacao powder, salt and vanilla in a mixing bowl. Pour soy milk, agave, espresso and apple cider vinegar into a cup and mix until well combined. Then pour the liquid ingredients to the dry ingredients and mix until your batter is smooth. Add the blueberries into the batter and mix again.
- Heat up some coconut oil in a pan and fry the pancakes over medium high heat. Each side will probably take around 1-2 minutes. This mixture makes enough for 7-8 fairly large pancakes.
- When your pancakes are finished top them with a dollop of soygurt and a sprinkle of hazelnuts. Add additional berries and a drizzle of agave or maple syrup.
