So people, let me explain the concept of the coming three posts. Over the course of the past months aka my summer break my life sort has developed into me coming home after nine o’clock at night most days. This is due to me having joined a running group, which usually meets at 7 pm. Me getting home that late most nights resulted in me eating the strangest, not so tasty dinner combos as I just couldn’t have been bothered to actually make something decent. I then ended up eating boring salads or rice cakes with avo most days and I didn’t enjoy this type of food only the tiniest bit. However, I am Fanny, the foodie, so plain boring food isn’t really my thing.. Anyways, so my point is that I decided to start meal prepping my dinners for the nights I usually get home late. I decided to come up with an Autumn Buddah Bowl consisting of pumpkin hummus, chilli kale kaniwa and a delicious cranberry walnut carrot salad. Today I am going to share the first component of this delicious bowl, which is the pumpkin hummus. Next week the carrot salad will follow and the week after you’ll finally be able to recreate the whole bowl with the recipe for the last component, the chilli kale kaniwa. So after this long long long explanation of why I came up with this recipe, I need to tell you that this is damn tasty and let’s get cooookin’.

Ingredients
  • 200g steamed pumpkin
  • 150g cooked chickpeas
  • 1 tl cumin
  • 2 tbs coconut milk
  • 1 tbs lemon juice
  • ¼ tsp chilli flakes
Instructions
  1. Add pumpkin, chickpeas, cumin, coconut oil, coconut milk and chilli flakes into a food processor and process until smooth. Serve topped with some additional coconut and a sprinkle of chilli flakes.

    Basic and boring food? STORY OF MY LIFE during fall quarter! But hey, there are times when food just needs to get a job done, right? ;D Anyways, this pumpkin hummus looks out of this world! Definitely going to try it out when I get the chance!
