The holiday season is slowly but surely approaching and as a non-meat eating person I highly rely on delicious sides at least when eating at someone else’s house. However, I also just love vegetable based side dishes, which is why I want to share a couple of delicious ones over the next couple of days. This persimmon & Swiss chard salad is making the start of the series. It’s such an easy yet incredibly unique salad.
Furthermore, it’s great for when you want to prep things ahead of time as you are wilting the Swiss chard anyways hence you can leave this salad sit for a while and it won’t turn bad. It actually might even get better as th flavours get the chance to really work together. The sesame oil infuses into the Swiss chard and the persimmon. The persimmon will release some of its sweetness and cover the Swiss chard in it, just wonderful.
- 250g Swiss Chard, roughly chopped
- 1 tbs sesame seeds
- 1 tbs balsamic
- 1 tbs Sesame oil
- 2 small persimmons, cut into chunks & seeds removed
- Salt
- Pepper
- Boil a pot of water. Add Swiss Chard and boil for 5 minutes. Drain and rinse with cold water.
- Add Swiss chard, Sesame, Sesame Oil, balsamic and persimmon into a bowl. Season with salt and pepper. Serve immediately or place in the fridge to serve later. Since you blanched the Swiss chard it has already wilted so you can let this salad sit for a while and it will still look and taste great.
