Hey there!
Soooo it’s already mid November and we’re slowly but surely approaching Christmas season. I know it’s not Christmas for another month, however, you gotta start baking cookies early enough. I mean of course I want to make sure that I can actually eat cookies all throughout advent not just on Christmas day. So I won’t be the only one enjoying the month of December eating delicious homemade cookies I am already sharing one of my go-to cookie recipes with you. Now you’re probably thinking that it’s nice you’ve now got a recipe, yet you’re probably never going to try it cause when???? When during the Christmas season will there be time to bake cookies all afternoon. Well I’ve got the answer, on the 10th of Decmeber from 15.00-18.00 at Gärtnerei Seefeld. I am actually hosting a Christmas cookie baking workshop with Gärtnerei and I am super excited to share my favourite recipes with you. We’ll be baking, chatting and listening to Christmas music all afternoon. The cookie recipe down below is only one of the three we’ll be baking, the others won’t bepublished beforehand. Oh and just saying, all of the recipes are refined sugar free, vegan and wheat free, in case you care about that sort of stuff oh and they’re delicious and addicting and just sooooo good.

- • 100g Dates, chopped
- • 100g spelt flour
- • 100g maple syrup
- • 60g pecans, ground
- • 50g coconut oil
- • 1 Orange, peel
- • 1 dash of salt
- • 1 tsp gingrebread spice
- • 22 pecans, for decorating
- Mix together Dates, spelt flour, maple syrup, ground pecans, coconut oil, orangepeel, salt and gingerbread spice. Knead it into a smooth dough. Wrap the dough in cling film and place it in the fridge to rest for 30 minutes.
- Preheat oven to 180°C and roll the cold dough into equally sized balls. Press one pecan half into each ball and bake the cookies for 15 minutes.

Christmas may be over, but I’m still LOVING recipes for cookies, hot cocoa, cakes and other Christmas dishes! Pecans are one of my favorite winter nuts, or pretty much any nut! I love these cute little cookies! Dates add the perfect sweetness too!
