I love chocolate, always have, always will. Anything chocolate is great and if you are following my Instagram @fannythefoodie you’d know that I add cacao powder to all kinds of things. I’ve made chocolate porridge, chia pudding and smoothies, however I’ve also prepared numerous chocolatey treats such as truffles and cakes of all types.
Today was one of those days I really fancied some chocolatey indulgence hence I decided to get baking and create another delicious treat.
I wanted to keep this fairly healthy so I only used dates as a sweetener and you can even keep this completely gluten-free by using gluten-free oats. As I have actually posted a couple of brownie recipes on here I decided to add a little special something to these ones. That is why I decided to add a creamy and smooth caramel layer. Yet, the caramel layer wasn’t prepared by melting together tons of sugar and butter, I actually just blended up a couple of dried figs and medjool dates with a splash of water to create this delicious caramel like yumminess.
So people, doesn’t this sound amazing? I am sure all you want right now is the recipe to recreate this delight, so here you go:
For a approx. 20cmx20cm baking tin you’ll need:
- 15 dates, soaked and pitted
- 300ml soy milk
- 2tbs almond butter
- a dash of vanilla
- 60g oat flour (you can use gluten-free oats)
- 2tsp ground chia seeds
- 1tsp baking powder
- 30g cacao powder
- 100g almond meal
filling(optional):
- 50ml water
- 4 medjool dates, pitted
- 4 large dried figs
- Preheat your oven to 180°C.
- Add the oat flour, vanilla, ground chia seeds, baking powder, cacao powder and almond meal into a mixing bowl.
- Add the soaked dates, soy milk and almod butter into a food processor and process until smooth.
- 4.Pour the wet ingredients to the dry ingredients mix it up until well combined . At this stage you can either continue with the caramel filling or if you prefer your brownies without the caramel just pour them into a 20x20cm brownie tin and bake for 25 minutes.
- If you prefer your brownies with the caramel layer, add the dried figs and the medjook dates into a food processor together with 50ml of water and blend until smooth.
- Pour half of your brownie batter into your brownie tin, then top it with the caramel layer and cover it all with the remaining batter.
- Bake for 25 minutes.
- When your brownies have finished baking, let them cool for at least 1 hour, then remove them from the tin and cut them into equally sized squares.
Voila, that’s it! I know, I have published numerous brownie recipes on here. However, these brownies are definitely one of the best brownies I have ever eaten. And trust me I have tried loads of different brownies, being a chocaholic, I always, always, always opt for the chocolate cake or brownie whenever I have cake somewhere so I am a pretty reliable source when it comes to judging brownies. Anyway , the point is that these brownies taste like heaven and you should start baking right now!

Thank you! Yes I buy the almond meal you can usually find it in the baking section of your supermarket. However if you can’t find it you could just buy peeled almonds and blitz it in your food processor until it has reached a flour like concistency. Hope that helps:) Have a wonderful day!!

Ooh, those sound delicious! I will try to make them for my birthday party this friday :P. Do you know if they taste just as good on the second day as on the first day? Would you best store them in the fridge or in plastic bags, or in glass containers?

Oh I am so sorry I didn’t reply to your message any earlier, but I am sure they’ll still taste great on the secon day as they’re super moist. I think storing them in a glass container is probably best. I hope your friend likes them. Viele Grüsse aus Zürich
