New week, new breakfast creations, am I right? Well in my case I am, the days are getting colder and shorter in Switzerland and yes I am still a true smoothie-bowl-aholic… I know that is not a word, but as learnt in my linguistics class new words are continuously invented so I might have just come up with a new neologism… Anyways you probably don’t care about linguistic terms and evolution of language so let me return to continue with my regular foodie talk.
As I said mornings are getting colder, darker and of course foggier hence I feel like warming instead of freezing cold brekkies and I’ve actually started to cheat on my smoothie bowls by adding porridge and overnight oats back to my daily morning ritual. I guess you all know how to cook a basic bowl of porridge yet you might struggle with getting it extra creamy and super flavourful. So in that case or just in case you feel like mixing it up a little I’m sharing my favourite way of getting my porridge super creamy with you. Trust me it is super easy and just requires one extra ingredient but believe me it makes a hell of a difference. Do you think it is time to share my secret with you, you do, don’t you?
Well I first want to tell you the other components needed for this heavenly creation, which are frozen blueberries, vanilla and the yummiest of yummiest part and probably the number one thing appearing on every foodies Instagram feed at current stage; baked bananas, yummo! Honestly baked bananas are the best thing ever and make every brekkie taste like a heavenly dessert!
Still wondering about the creamy secret of mine? Hmm maybe I should keep it to myself, you know just in case I ever open up my own restaurant… Noooo jokes, soy yoghurt, just add a dollop of soy yoghurt (or any other yoghurt you like) and your porridge will be a hundred times creamier. You were probably expecting some sort of extraordinary ingredient only available on one specific website during a certain time of the year but sometimes the most simple ingredients turn a dish from being pretty decent to being amazingly tasty.
So the recipe, right that’s what you’ve all been waiting for.
- 25 g oats
- 3tbs soy yoghurt
- ¾ cup water
- ½ tsp vanilla
- sweetener of your choice
- ¼ cup frozen blueberries
- 1 banana
- 50ml soy milk
optional toppings:
- Pumpkin seed
- Cacao nibs
- Slice your banana in thick slices, put them on a lined baking sheet and bake for 8 minutes at 180°C.
- Meanwhile add the oats, water, vanilla into a saucepan and cook your porridge oats in ¾ cups of water until creamy.
- When your porridge is done stir in the soy milk and let it sit for a bit so it can thicken even more.
- Just before serving fold under the blueberries and the soy yoghurt and add a sweetener if you fancy adding additional sweetness. You can also keep some of the blueberries aside if you want to have a few spare ones to top your breakfast bowl with.
- By now your baked banana slices should be ready and you can remove them from the oven and top your porridge with the roasted banana and if you like additional blueberries as well as cacao nibs and pumpkin seeds.
Voila people, creamiest and most delicious porridge creation, done!
