Hey there!
Today we experienced on of those beautifully sunny Sundays in Switzerland, which I absolutely adore. There’s nothing better than a day of doing nothing but being outside and enjoying the sun. And obviously such a day is best finished off with a barbecue. Well to be honest I only had half the day off the other part of the day I attempted to study maths, which didn’t quite work out, since I got distracted pretty soon and ended up going on a bike ride with my mum.
So after my mum and I got back from our cycle we decided to fire up the barbecue and have a delicious veggie barbecue.
Well actually my mum fired up the barbecue, since I am not particularly good at that but I did the cooking part. So I decided to make a pasta salad, which I’ll post the recipe of sometime soon, some roasted capsicum hummus and then the star of today’s post; some delicious tofu, capsicum and nectarine skewers. I marinated the tofu with a sweet and tangy marinade made off lime juice, maple syrup and soy sauce. The combination of the sweet nectarine the tangy and slightly sweet marinated tofu and the plain capsicum ended up being a total success. The flavours just worked so well together sweet and my mum and ended up being pretty pleased with our vegan barbecue experiment. Prior to chucking our skewers on the barbecue we were actually rather worried that they wouldn’t turn out. But, surprise, surprise the outcome was delicious! By cooking the tofu on the barbecue it got this slight smoky flavour, which I personally love. So I could be going on and on about how delicious those skewers were, yet what you probably care about is how on earth you prepare this yummy vegan barbecue option.
So here you go, the recipe:
- 1 yellow capsicum
- 1 nectarine
- 150g tofu
- 2tbs soy sauce
- 1tbs maple syrup
- 1 lime (juice)
- Cut the tofu into 1.5 cm cubes.
- Mix the soy sauce, the maple syrup and the juice of your lime and add the tofu cubes. Let it marinate for at least one hour.
- When your tofu has marinated cut the nectarine into segments and the capsicum into chunks. Thread and divide the tofu cubes, nectarine segments and the capsicum between the skewers.
- Put your skewers onto an aluminium tray and grill on the barbecue for about 15 minutes or until your capsicum are done and the tofu is golden brown.
Voila, that was it. Those skewers are the perfect thing to chuck on the barbie for all you vegans and vegetarians out there. They’re so delicious and super easy to prepare which makes them even better.
So that’s it for today, I’m off now, I might do some more revision for my finals next week, well actually I probably won’t. Wish me luck guys, from tomorrow onwards I’ll be writing a 4 hour exam each day for the rest of the week and guess what after that I’ve only got my speaking exams left and than I’m done with high school, forever!
