As of right now I am actually in Australia, which obviously means no cooking for the next two weeks, which would also result in no new recipes. Yet smart me prewrote a few recipes. Well I wasn’t going to be totally absent from this blog while travelling, how could I?
I decided to do a series of my four favourite breakfasts for the following few posts since I’ve noticed that I actually haven’t got any breakfast recipes on my blog.
All of the four recipes I’m going to share in the next couple of days will be super easy to prepare and they’re all for one serving as I don’t tend to prepare brekkie for a crowd of people and you probably aren’t either so I thought I would be easier if the recipes were for just one serving. I’m aware those breakfasts I’m going to share with you are much closer to being a guide than actual recipes yet to some of you they might just be an inspiration to prepare a homemade breakfast or just mix it up a little with some new ideas.
Early mornings can be super stressful and I totally know that feeling of not having the time to prepare a balanced breakfast. I used to just eat a bowl of crappy cereal or skip it completely. Yet having breakfast is actually super important to get you started in the morning so I like to put a little effort into mine. And yes I’m only human so on the odd occasion when I’m running late I’d just chuck a banana and an apple in my bag and have these on the way.
However to avoid those situations of being late and hungry and not having time to prepare brekkie there are always over night oats which can easily be prepared the day ahead. And then in the morning you can just garb them and run out of your door and you’ll be all set for an energised day.
Overnight oats are honestly one of my favourite breakfasts, not only because I don’t have to waste time in the morning also because they’re just so delicious. I probably prepare a jar of over night oats at least twice a week. Sometimes I actually even take them for lunch. I just love Birchermüesli. It is literally one of my favourite foods ever. I could eat it breakfast, lunch and dinner.
Preparing your oats in a jar it makes the perfect on the go meal, which as I said comes in handy on those busy mornings we all know so well.
I personally recommend getting a Weck jar if you want to carry your oats to school or work since they definitely won’t leak. I have used ordinary jam jars before and if I hadn’t put them into a little zip lock bag I would have had muesli all over my schoolbooks.
Usually I use the same base Ingredients, which are banana, apple, soy yoghurt, almond milk, oats and chia seeds. Other than that I like to add two to three additional yummy ingredients such as dried fruit, nuts, cacao nibs or more fresh fruit it just depends on what we’ve got at home and what I fancy that day. This is actually another thing I love about my Birchermüesli it is just so versatile and I definitely need that since I can’t stand eating the exact same thing over and over again. I just like to keep things interesting.
Basic recipe
- 1 banana
- ½ grated apple
- 2.5tbs soy yoghurt
- almond milk
- 1-2tbs oats
- 1tsp chia seeds
additional ingredients I like to add
- raisins
- dried figs
- cacao nibs
- berries
- vanilla powder
- cinnamon
- dates
- bee pollen
- matcha powder
- Add your oats, fruit and chia seeds into a jar.
- Add the additional ingredients of your choice.
- Then add the yoghurt and as much almond milk as you can fit into your jar. Then mix it up and put the lid on it and shake it until perfectly mixed.
- Put your oats in the fridge.
- Grab and go!
Voila this was easy, wasn’t it? I totally love how fast this delicious breakfast can be prepared. So perfect for those busy mornings when really no one’s got time to cook up a storm.

Yeah I know I feel so lucky to be here, it is such a beautiful country, I just love it here. Unfortunately I’m only able to stay for two weeks though.. I’m sure you’ll be able to come here one day:)
