When I prepare my lunch at home – a spring salad with a Moroccan twist

Hey there!

Once in a while it happens that I can actually enjoy my lunch at home and I don’t have to settle for one of my jar meals for lunch. No offence I absolutely love my jar lunches I just prefer enjoying my food nicely arranged on a plate instead of all stuffed into a jar.

So when I got home the afternoon I created this I hadn’t actually had the intention to post the outcome on my blog. I was actually pretty hungry and I was just going to snap a quick picture for my Instagram. Yet when I tried the combination I just came up with I realised that I just couldn’t not share this delight with you. That is also why I for once haven’t got any photos of the individual preparation steps. Nevertheless I’m convinced you’ll easily be able to follow my instructions without an accompanying picture since this is really just a putting together of a few ingredients which does most definitely not require much cooking skill.

I always like to add some kind of grain my lunch salads be it couscous, spelt or plain rice, yet today I went for bulgur. I personally enjoy bulgur mixed with flavours you’d find in the North African cuisine hence I added some raisins and pomegranate seeds to my salad and cumin as well as mint were actually the main ingredients of my dressing. Other than that I also decided to cook up some asparagus and thinly slice some radishes I had lying around in the fridge.

This salad was honestly so tasty, just delicious to enjoy after an exhausting morning at school. I might even prepare this in a jar in the future and enjoy it at school, it was just so amazingly delicious!

The combination of the slightly spicy rocket and radishes with the tangy dressing and the sweet raisins and pomegranate seeds just complemented each other perfectly. And for the asparagus I can just say: you can never go wrong with asparagus, they’re just perfect I can eat them alongside anything.

The recipe down below will be a one serving recipe and if you happen to be hungrier you can just add some more rocket and bulgur. These are just the measurements I used for myself.

  • a handful of rocket
  • 1tbs pomegranate seeds
  • 3 radishes
  • 30g bulgur (dry weight)
  • 1tbs raisins
  • 5 asparagus

dressing

  • 2tbs soy yoghurt (you can use normal yoghurt as well)
  • 1/2tsp cumin
  • 1-2tsp white wine vinegar
  • 6 mint leaves
  • salt
  1. Prepare bulgur according to packaging directions and cook your asparagus in salted water until tender.
  2. Meanwhile put all the ingredients of your dressing into a food processor until they’ve come together evenly.
  3. Prepare the rest of the ingredients and when the bulgur and the asparagus are tender plate it all up and drizzle your dressing on top.

Voila that’s it. Quick, easy and delicious, just a perfect lunch. Well I might just mention it again but his was absolutely amazing, so try it, try it, try it!!
