Hey there!
I’ve got another quick and easy summer salad for you. Today’s recipe was inspired by a couscous salad I had at les halles in Zurich, a restaurant, which is worth being checked out just for its unusual location and interior design. Not forgetting the food, which is absolutely divine.
Since I didn’t feel like couscous though I decided to have a go at a chickpea salad. The other ingredients are really only a handful. Besides chickpeas I also used tomatoes and cucumber. To give this dish its special twist, I also incorporated the seeds of one pomegranate into the recipe. The pomegranate seeds indeed were the thing, which made me have the urge to recreate the lovely salad I ate at les halles. As far as seasoning goes I only used lemon juice, olive oil, plenty of parsley and some cumin seeds, well and of course some salt and pepper.
Even though I used chickpeas, which are known to be quite heavy, the added cucumber as well as the pomegranate seeds turned the salad into a refreshing summery side dish, which is perfect if it is eaten accompanied with some baked eggplant or how I did it this time with a salmon filet. Nevertheless I do think that you could also enjoy it without anything on the side, it is delicious as is and since the chickpeas form the main part it is also rather filling.
Of course you now want to know how you’ll end up with the same lovely creation as I did. So here you go.
You will need:
- 250 g cooked chickpeas (canned or freshly cooked)
- ½ of a big cucumber
- 2 tomatoes
- 1 pomegranate
- lots of parsley
- 1 tbs olive oil
- 1 lemon (juice)
- 1 tsp cumin
- salt
- pepper
1. Dice tomatoes and cucumber
2. Remove the pomegranate seeds from its skin
3. Throw the pomegranate seeds, the chickpeas, cucumber and tomatoes into a bowl
4.Chop up the parsley, add it to the other ingredients in the bowl
5. Juice lemon and poor the juice over the other ingredients
6. Also add olive oil and cumin seeds as well as salt and pepper to taste
7. Mix it well through until all the ingredients are covered evenly in the dressing
Voila, that’s it. That was hardly a recipe, you basically just have to throw a bunch of ingredients in a bowl and mix it well to finish it up. As simple as this is though as delicious will it taste. I’ll sure be making this a few times this summer. I must say I created a pretty decent summer salad there, which you should most definitely try out. So go put your apron on and get started!
