Ingredients
Energie-Bites:
100g dried apricots
30g cranberries
3 El chia seed
30g pistachios
50g oats
50g shredded coconut
25g coconut oil
2 tbs cashew butter*
⅛ tsp vanilla
Decoration:
60g dark chocolate
30g pistachios, roughly chopped
2 tbs shredded coconut
Instructions
Add all ingredients for the energy bites into a food processor and process until it reaches a dough-like consistency. The dough should be mouldable but still chunky.
Press the mixture into a baking sheet into a 1 cm thick square (15x15cm). Let set in the freezer for 30 minutes.
Melt chocolate, meanwhile mix chopped pistachios and shredded coconut in a small bowl or on a small plate.
Take the square out of the freezer and cut into 8 equally sized bars. Cover one end of the bar with chocolate and cover with the coconut and pistachio mixture.
Place in the fridge to set. Store in the fridge or freezer. The energy bites will last for about 2 weeks in the fridge. *Cashew butter can be replaced with almond butter or peanut butter.
