For the compote he t up the coconut oil in a pan over medium heat. Add apples, pecans , pumpkin seed, dates and cinnamon as well as 1dl water. Cover with a lid and let the mixture cook over medium low heat for 10 minutes.
Meanwhile whisk together sweet potato puree, spelt flour, cinnamon, vanilla, salt, sparkling water, maple syrup and baking powder until it forms a smooth batter. Heat up some coconut oil in a pan and use approximately 1 tbs of batter for each pancake. Bake for approx. 2-3 minutes on each s ide over medium heat.
When all your pancakes are ready, stack the up and top the with the compote and if you like an additional drizzle of maple syrup.
