vegan buckwheat carob choc chip pancakes

Ingredients
  • 1 cup buckwheat flour
  • 4tsp baking powder
  • 4tsp carob powder
  • 2tsp stevua or coconut sugar
  • 4tsp chia seeds
  • 240ml soy milk
  • a dash of cinnamon
  • optional: 4tsp cacao nibs
  • coconut oil
  • toppings:
  • 4tbs chia pudding
  • 2 passionfruits
  • coconut chips
Instructions
  1. Add all of your ingredients but the cacao nibs into a blender and blend until smooth.
  2. Add in the cacao nibs and mix until well combined.
  3. Heat up some coconut oil in a frying pan and bake your pancake over mediu, high heat for about 2-3 minutes on each side until they’re done.
  4. Serve tow pancakes with a dollop of chia pudding, a few coconut chips and the pulp of half a passion fruit. You can also pour over some maple syrup or agave, if you fancy some more sweetness.
