Let me introduce you to my daily evening routine. I have tea almost every night after dinner, a habit I acquired while living in Australia, as my host parents used to always end their night with a freshly brewed cup of tea. They didn’t get me to have black tea though, I just prefer herbal teas. I have actually continued that habit up until now and I usually have fennel tea as it does wonders for your tummy after a heavy or not so heavy meal, plus I love the flavour.

So when Lipton reached out to me and asked whether I wanted to try out their new flavour After Dinner Tea and include it my routine I was of course up for it. It actually even contains fennel as well as peppermint, spearmint and “a touch of ginger”. All things I love, all things I occasionally add to my tea anyways, so of course I said yes.
Sweet treats and tea, what a perfect combo.
Another part of my evening routine is actually a little sweet treat. I just always have a sweet tooth after dinner I can’t help it. My current obsession is stuffed dates. I like using fresh dates, from which I remove the pit. I then stuff it with a spoonful of nut butter and sometimes I dunk it in chocolate. As I have been having one or two of these every day for the past weeks, I decided to prepare some ahead of time to have them waiting for me at night to be enjoyed alongside my After Dinner tea, which actually made its way into my daily routine from the first day I tried it.
The easiest recipe ever.
So if you’d like to join me on my evening ritual and drink tea and have a little healthy sweet treat with it, I am sharing my stuffed date “recipe” below. However it is hardly a recipe, it is much more a list of variations you could make. I chose to settle for pumpkin seed butter, almond butter and hazelnut butter, however, you could use peanut butter, cashew butter or even some kind of chocolate hazelnut spread, whatever floats your boat.

- 9 fresh dates, pits removed
- 40g dark chocolate
- 20g vegan milk chocolate
- 1. Variation
- almond butter
- dark chocolate
- salt flakes
- 2. Variation
- hazelnut butter
- vegan milk chocolate
- chopped hazelnut
- 3. Variation
- pumpkin seed butter
- chopped pistachios
- dark chocolate
- Melt the two varieties of chocolate and put aside.
- For the first variation stuff your dates with about ½ tsp of almond butter and dunk one half into the dark chocolate, place on a plate and sprinkle with salt flakes.
- For the second variation stuff your dates with about ½ tsp of hazelnut butter and dunk one half into the milk chocolate, place on a plate and sprinkle with chopped hazelnuts.
- For the third variation stuff your dates with about ½ tsp of pumpkin seed butter and dunk one half into the dark chocolate, place on a plate and sprinkle with chopped pistachios.
- Place the plate in the fridge so the chocolate will set, afterwards the stuffed dates can be stored in a container in the fridge. I made three each, but you can also only make one variation or use different nut butters. What ever you fancy.
