Today I am sharing one of the easiest recipes with you that also happens to be one of my go-to summer recipes. It is super refreshing and makes for the perfect light summer breakfast or snack. If you want to make this a meal I reccomend adding some hemp or lin seed to make it a bit more filling as this is rather light otherwise.
I also love that my watermelon mint smoothie only contains three ingredients, which I usually always got on hand during the summer: watermelon, mint and lime juice. The combination of those three components is just heavenly and super refreshing on a hot Summer day.
Imagine sitting outside on the beach or at the lake for hours and then coming home to this waiting for you in the fridge, what a pleasure!
If you prefer you smoothie to be more icy you could also freeze your cubed watermelon in advance. This way you’ll achieve a slightly creamier and less liquidy texture. However, if you end up using frozen watermelon you should probably add around 1-2 dl water.
So that’s it really, there’s not much more to say about this incredibly simple recipe. Let’s get blendin’
- ½ baby watermelon, peeled and cubed
- 2 sprigs of mint
- ½ lime, juice
- Add al of the ingredients into a blender and blend until completely smooth.
- Serve immediately or store in the fridge for up to three days. Shake before serving it.

I actually really love the combination of watermelon and mint together, especially in a chilled beverage! This recipe looks incredible! Personally, I LOVE creamy smoothies, because you can eat them with a spoon!
