Let’s combat those afternoon lows with a healthy treat!

Hey there!

Anyone with a sweet tooth out there? Anyone with an afternoon snack craving? Anyone wanting to try my delicious Lamington Bites?

So I love coming up with delicious treats, sometimes they’re mainly treats, however, sometimes they’re also pretty healthy and I’d consider this one a healthy treat. My lamington bites don’t contain any refined sugar, they’re gluten-free and taste absolutely amazing! They literally make for the perfect afternoon pick me up. Don’t we all know that low, I usually hit it at araoung 4 o’clock. My brain will stop working and I suddenly feel super tired, that’s when I grab one of those and guess what afterwards I am all ready and set to do some more work. I usually make a whole batch of them which will last me about one and a half weeks of afternoon lows.

My lamington bites only require six simple ingredients, of which all of them are available at your regular grocery store. Dates, oats, coconut, dark chocolate, vanilla and coconut oil, that’s it!

Note:

I actually just realised after, not looking at this post for a week or so, that I should probably explain why on earth I am calling this recipe a Lamington. Unless you happen to be Australian or have lived there for a while, then this is very clear to you and you probably didn’t even notice that this could be weird to some people. This is at least what happend to me, I didn’t even think about the possibility of people not knowing what a Lamington is, I lived in Australia for a year btw, I am Swiss though. Anyways so a traditional Lamington is an Austraian dessert made from sponge cake, which has been coated in a chocolate icing and dunked into shredded coconut.

Serves: 9 Squares
Ingredients
  • 100g dates, pitted
  • 50g Oats
  • 100g shredded coconut
  • ½ tsp vanilla
  • 25 g coconut oil
  • 50g dark chocolate
Instructions
  1. Add Dates oats, half of the shredded coconut, coconut oil and vanilla into a blender and blend until it has formed into dough like consistency. Press into a square with approx. 1 cm thickness and place it in the freezer for 30 minutes.
  2. When the Lamington square has hardened cut it into equally sized rectangles. Melt the chocolate and then dunk the naked squares in the chocolate and roll them in the remaining shredded coconut. Let the Lamington Bites harden on a cooling rack.
  3. Store in the fridge in an air-tight container.

    I love that you explained exactly what a lamington was Fanny! It didn’t cross my mind either that some people don’t actually know what they are, or, even worse, have never tasted one… this is definitely an improvement on the original though – fast, healthy and simple 🙂

      Thanks Rosie:)!!Same, at first I didn’t even think that some people couldn’t know what a lamington was, it just seemed so obvious but then I remembered that I had never actually seen lamingtons anywhere but in Australia 🙂
