Hey there!
I seem to be enjoying creating new breakfast recipes recently.. Yes this is going to be another breakfast recipe. Sorry for all of you who are still content with eating the same old cereal you have been for years and years. But maybe my breakfast recipe overflow will encourage you to try something new, maybe you are going to convert to being a matcha quinoa mueslilover for the next 10 years or just until I publish a new recipe that’ll be even better..
I mean I used to be one of those people who ate the most boring things for breakfast. As a matter of fact I can actually hardly remember what I used to eat for breakfast before I went on exchange as I literally did not care at all. Back then I didn’t consider breakfast a meal, I think I skipped it most days, just because it meant getting up even earlier. Swiss schools are though timetable-wise, most days we started school at 7.30, I know soooo early, way too early for me. I mean if I had lived right next to my school I would’ve been fine, but getting to school by 7.30 meant getting up at 6 the latest. I then went on exchange where I suddenly was able to „sleep in“ till 7.30 as school didint‘ start till 9. And my host family actually always sat down together and had breakfast in the sun room while watching sime kind of morning show on TV so I suddenly started enjoying having breakfast and trying different things. I went from porridge to cereal to crumpets to toast, I just tried all the things we didin’t really eat back home. You should always try new things when you’ve got the chance to do so. You’ll most likely benefit from it and even if you then realise that you are never going to do this again you at least know that you don’t actually like whatever you just tried.
And right now I am giving you the chance to try a new breakfast you probably have never tried up to this date. So take that chance and try somthing new, try making matcha quinoa muesli and stepping up your breakfast gamne with this yummy creation. Trying new things always enrich your life, trust me, I do it all the time. I often challenge myself toget out of my comfort zone and well mostly it turns out great. You know what, starting this blog, was one of those times I tried something new. One of those times I got out of my comfort zone. One of those times I gained a whole lot by saying yes to trying seomthing new.
Anyways enough inspirational (or not so inspirational?) talk, here you go the recipe for my matcha quinoa muesli:
- 3tbs puffed quinoa*
- 1tbs chia seeds
- 1 tbs linseed
- 1 sachet of matcha by Your Tea (=2 gram)
- ⅓ cup plantbased milk (I used soy)
- 50g soy yogurt
- ½ banana, chopped
- 50g blueberries
- maple syrup
- tahini additional blueberries for topping
- pistachios
- Add the puffed quiona, chia seeds, linseed, matcha, plantbased milk, soy yogurt, banana and blueberries into a jar.
- Mix it up until weel combined, cover with a lid and place in the fridge over night.
- Your muesli will have thickened quite a bit over night, so if you prefer it a bit runnier you can add another splash of plantbased milk. Then scoop the mixture into a bowl and top with a handful of blueberries, sprinkle with a few pistachios and add a drizzle of tahini and maple syrup.
- You can obviously also just leave it in the jar and add the toppings to the jar and then enjoy your breakfast on the go.
This tasted absolutely delicious, it was super creamy and I personally just adore the matcha flavour. Yes I love me some matcha! I literally add it to everthing, green smoothies, porridge and well of course matcha quinoa muesli.
