Hey there!
Surprise, surprise, I finally managed to create another savoury recipe. I mean a try out different savoury things on a daily basis but sometimes I just don’t feel like writing down ingredients and taking pictures after an exhausting day at uni. However, today I got home fairly early so I decided to hit the kitchen.
For today’s recipe I decided to include two of my recent food favourites. The first one being buckwheat ramen noodles, they’re so damn tasty, however you can totally substitute them with regular ramen or even plain spaghetti and it will taste absolutely amazing. My other new fave is a spice I only just got: Zatar. Zatar is a spice mix mad of white sesame seeds, thyme, marjoram, cumin, oregano, sumach and sea salt. I put it on salads, in dips, on avo toasts, I just love it! Anyways back to talking about my dinner creation, to create a delicious meal out of Zatar and buckwheat ramen I decided to pair it with a creamy avocado tahini sauce and a bunch of veggies and gosh, it tasted absolutely amazing. Sometimes I just love creating recipes with totally new (at least new to me) flavour combinations and this was definitely one of them.
So moving on, I actually want to share a recipe today, for once I’m not going to bore you with my going on about my thoughts, anecdotes from my childhood or the deliciousness of this meal.
- 3 cloves of garlic, finely chopped
- 1 small onion, finely chopped
- 1 eggplant, cut into small cubes
- 80g baby spinach
- 80g frozen Edamame
- 100g Brussles sprouts, cut into quarters
- 1 avocado/ 2 baby avocados
- 1tbs tahini
- 60ml water
- 2tsp zatar by just spices**
- 120g buckwheat ramen*
- water
- salt
- Heat up some olive oil in a pan and fry your chopped garlic and onion over medium heat until the onion has gone transluscent.
- Add the quartered Brussles sprouts and the eggplant cubes and fry them over medium heat until the eggplant has softened, this will take approximately 10 minutes. Menawhile bring the water for the buckwheat ramen to a boil.
- When your water has come to a boil add the buckwheat ramen and some salt and cook until they’re ready, drain them and put aside for later.
- By now your eggplant should have softened. Add in the edamame and the spinach and let the spinach wilt and the edamame heat through.
- While your veggies are cooking add half of the avocado or one of the mini avocados, 60ml of water, ½ teaspoon of salt and the tahini into a blender and blend until smooth and creamy.
- When all of your veggies are cooked through, add the avocado sauce, the buckwheat ramen and the zatar spice to your veggies and mix until well combined.
- Serve your amazing noodles topped with the other half of the avocado/ ½ of one of the mini avocados and a drizzle of tahini.
Voila, that’s it a super simple yet somewhat different noodle dish that only takes a couple of minutes to prepare. I absolutely loved this and I will definitely continue preparing this yumminess when I haven’t got much time on my hands, however, I still want a dinner that isn’t all that ordinary and boring.
