Hey there!
So apparently I am in charge of Bircher muesli when it comes to brunching with friends. This Sunday one of my former class mates invited for a brunch reunion with the 4D-crew and a couple of days prior I received a text saying: Fanny, I am planning for Sunday, are you bringing your amazing muesli? Me being the nice person I am of course responded yes, for sure. Well to be honest I would have probably also brought along some Bircher even if I wasn’t asked to, cause lets face it, I just like cooking/preparing food and you basically cannot invite me without receiving some kind of homemade treat.
Anyways, I decided to fancy up the usual Bircher muesli and prepare a tropical berry version. For the tropical touch I added mango puree, passion fruit, shredded coconut and coconut milk. As far as berries go I decided to go for frozen raspberries and yes shame on me I splurged on blueberries in March, they were organic though. I usually try to stay away from buying unseasonal fruit, at least if it does grow here at certain times of the year.
Let’s continue with the Bircher story, so unfortunately most of my high school buddies have moved to Bern which is approximately two hours from where I live so I had to get up super early, on a Sunday, after being out till late, so yaay for that. Anyways I packed up my Bircher muesli, plus a cake I baked and some cookies I had lying around and hit the road to Bern. When I got there one of my friends actually said she was lying in bed and when she saw my Bircher muesli on Instagram she got even more excited and despite the few hours of sleep she had she jumped out of bed to get to that yummi muesli as soon as possible. Anyways the point of this whole story is that I want to show you that my Bircher is definitely worth a try, I definitely do know how to make a yummy Bircher, after all I am Swiss and Bircher Muesli is definitely a signature dish in any Swiss family.
- 1cup oats
- 1cup blueberries
- 1cup raspberries
- ½ cup shredded coconut
- ½ cup coconut milk
- 1cup oat milk
- 450g soygurt
- 1 apple, chopped
- 1 passion fruit
- ½ cup mango puree
- Throw all your ingredients into a big bowl bowl and mix until well combined.
- Place your Bircher muesli in the fridge and leave it to thicken over night. Enjoy your Bircher during the following days or serve at a brunch.
That’s it peeps. Serve it topped with fresh fruit or a sprinkle of crunchy granola and enjoy. This recipe is perfect for a Sunday brunch meet-up with a bunch of people or you can even just prepare this at the beginning of the week and then enjoy it during the week. I think this should definitely last up to four to five days in the fridge. Happy Bircher muesli-making.
