Hey there!
Guess what, after 2 months, 9 weeks, 65 days and 1560 hours of holidays in the middle of the school year, which I am so not used to, I can finally go back to university. Finally, I can. I don’t have to. I am not forced to go. I am one of those lucky people who get the opportunity to go to university. I am enabled to study, I am offered to widen my horizon, to extend my knowledge, to learn. I don’t have to. I can. And I want to, I really do.
This morning I got up and yes the first thought that came to my mind was: S*** only one more day of freedom. Wait what? Freedom? I mean I chose to go to university. No one forced told me to do so. I wanted this. I still do. Life might be so much easier when you get to chill all day, when you can get up whenever, eat breakfast at 12, stay up until 3 a.m. Yeah it’s fun. Though why can’t uni or as a matter of fact school be fun, why do people always look at the down side of things. I personally feel like one can dine enjoyment in every activity. What about the satisfaction of leaving the classroom and feeling like one learnt something, isn’t that fun? Being able to listen to someone who actually knows what they are talking about, who is forwarding knowledge, why don’t we appreciate this? We do we automatically relate holidays with good and work with bad? I am well aware that not everybody does so, however the general attitude of humanity does not say: “I am so excited for work” at the end of a holiday. People dread going back to work, going back to school, uni, whatever, but why?
What’s the point of this post your asking? I don’t know, I honestly don’t. I am just writing down my thoughts, things that are on my mind. That’s what a blog is for, in my opinion, it is a place where you can write whatever, say whatever, just express yourself. And that’s what I love about blogging. I can just talk, talk, talk and no one’s going to stop me, no one’s going to tell me: “Stop it Fanny, your mind is wandering off!”
Anyways I could go on and on, I just want you and me to realise that being able to study, or go to school is a gift. It is not to be taken for granted. Not everyone has the opportunity to do so. We should appreciate it, I should!
So, guys as you all know life’s better with food, so much better. Uni’s better with food, with food that gives you energy, cause all the listening can be somewhat exhausting. Can’t it? So what else could one ask for than chocolate vanilla energy bars?
So here you go, the actual point of this post, another recipe.
- 8 fresh dried dates, pitted
- 3tbs cashew butter
- 1tbs water (optional, my cashew butter was very dry, if yours is super liquidy you might want to omit the water)
- ½ cup oats
- ½ cup shredded coconut
- ½ tsp cinnamon
- ½ vanilla bean
- 2 tsp cacao powder
- 10 pecans, chopped
- Scrape out the seeds of the vanilla bean, add the vanilla bean seeds, dates, cashew butter, water, oats, coconut and cinnamon into a food processor until the ingredeitns have come together to a cookie dough like mixture.
- Remove half of the mixture from the food processor and add the cacao to the remaining half, process until well combined.
- Roll the two dough balls into even sized squares that are both 1cm thick. Make sure to place them on baking paper and place a piece of plastic foil in between your rolling pin and your mixture to prevent it from sticking.
- Place the vanilla square on top of the chocolate square and sprinkle the cashews on top.
- To make all the layers stick together, roll your rolling pin over top until you reach 1.5 cm thickness. Cut into equally sized bars and store in the fridge or freezer. I like to store mine in the freezer as I personally really love the slight crunch they get that way, however if you like your energy bars on the softer side just store them in the fridge.
