So the first part of the festive season is over. But we should not forget about New Year’s Eve, the night of the nights, am I right?
In all seriousness though, I personally think that New Year’s Eve is totally overrated, I mean it’s a day like any other. Why do we have to treat this day of the year any differently than all the others? Who cares that a new year stars. I mean after all humanity decided that a new year starts in January, why doesn’t it start in June? Or July?
Anyways, I just don’t get the hype about New Year’s Eve, for me it is a day like any other. Well not quite, it is also my mum’s birthday, so that’s what used to make New Year’s Eve special for me.
Then suddenly people started to care about what they were doing on New Year’s Eve, suddenly the only thing people talked about after the winter break was the oh-so amazing night they had on New Year’s Eve. I only started to think about my plans on New Year’s Eve about two years ago, until then I just celebrated with my mum, I mean after all it was her day and she was the reason we celebrated. Plus we got to stay up really late, which was always the best thing when you were twelve years old and knew nothing about life. Anyways for the past year’s I was always that person who had nothing on New Year’s cause I just didn’t care and then this year I managed to get invited to two New Year’s shindigs. I guess for once I am not going to be all boring on New Year’s, we’ll see.
So let me get to the actual reason for writing this post, mini chocolate mousse cakes, the perfect dessert for a New Year’s Eve dinner party. It is such an easy, yet super delicious recipe and it actually makes about 16-18 mini cakes which is perfect when cooking for a crowd and if you’re catering for a super large group you can easily double the recipe and make an even bigger bunch of yummylicious chocolate treats.
My mouth is watering by just thinking about this heavenly creation. Gosh, they tasted divine, so smooth, creamy, sweet, chocolatey, just perfect!
Makes 16-18 mini chocolate orange mousse cakes
Base:
- 80g pecans
- 7 medjool dates, pitted
- zest of ½ orange
- 1tbs cacao powder
- 2tsp orange juice
Chocolate mousse layer:
- Zest of ½ orange
- 250g silken tofu
- 60g dark chocolate
- 2tbs cacao powder
- 5g agar agar
Topping:
- 30g dark chocolate
- a few pecans, chopped
- orange zest
- Line your mini muffin tins with baking paper on the bottom and grease the sides with coconut oil.
- Add the pecans, dates, zest of half an orange, cacao powder and orange juice to a food processor and process until the mixture has come together to a dough like concistency.
- Distribute the dough into the muffin tin and flatten it out to about 0.7mm thickness.
- Place your muffin tin in the fridge while preparing the chocolate mousse layer.
- Add the zest of half an orange, silken tofu, dark chocolate and cacao powder into a food processor and process until smooth.
- Pour your mixture into a saucepan and stir in the agar agar. Let the mixture come to a simmer and simmer it for about 1 minute.
- Pour the mixture on top of the base and place it in the fridge until set.
- When the mousse mixture has set, remove the cakes from the muffin tin. Melt the chocolate and spread about ½ tsp worth on each mini cake. Top with chopped pecans and a shaving of orange zest.
- Store in the fridge until ready to serve. They should be consumed within two to three days.
Voila, a decadent dessert that actually doesn’t contain any nasty ingredients. It is super chocolaty, yet the fact that it is so tiny makes this the perfect dessert, especially served alongside a fresh and zesty date orange salad. I am positive that this is going to become on of the go-to desserts for whenever I have to cook for guests. It’s easy, it doesn’t require any fancy ingredients and last but not least it tastes absolutely AMAZING!
