Are you sick of ordinary porridge? – Buckwheat quinoa porridge

Hey there!
I love porridge, it’s so delicious and warming, just perfect for winter. Yet, I’ve ben having it heaps over the past weeks so I decided to mix it up a little and swap out the oats for buckwheat and quinoa. To be truly honest I’ve never been a big fan of quinoa, I actually did not get the hype at all. Though I’ve recently started to add it to my porridge and I’ve been loving it. The porridge just becomes extra thick and creamy.

I decided to soak the buckwheat over night and slightly pulse it in the food processor. I am not sure if you could skip the soaking but I think it definitely shortens the cooking time. For the sake of this recipe I decided to write down the basic recipes so you can apply it to any flavour combo you love. The day I took the photos I decided to go all out on the Christmas flavours and I added a dash of cinnamon, ginger and I topped it with clementine and kiwi. However, toppings and flavouring are totally up to you and you can add whatever you’ve got lying around in the pantry.

 

I should probably just continue with the recipe right now. I mean that’s what you’re all here for, so here you go:

 

  • 2tbs buckwheat that has been soaked over night
  • 1tbs quinoa
  • ¼ cup soy milk
  • ¼ cup water
  • 1tbs soy yoghurt
  • a dash of vanilla
  • agave (optional)¨

 

optional flavour and toppings:

  •  a dash of cinnamon
  • a dash of ginger
  • 1 clementine
  • 1tbs pomegranate seeds
  • a few chopped peanuts

 

 

  1. Pulse your soaked buckwheat groats in the food processor. It shouldn’t form a paste just a chunky mixture.
  2. Add the buckwheat, quinoa, soy milk, water, vanilla and agave into a saucepan.
  3. Let the mixture come to a boil, when the mixture is bubbling lower the heat to low and let it cook uncovered for 10 minutes until smooth and creamy.
  4. Stir in the soy yoghurtfor ultimate creaminess and serve with whatever toppings you fancy. I personally like to fry a banana in some coconut oil and add it on top of my porridge.

Voila, that’s it perfect for all you gluten-free folks, perfect for all you experimental people, perfect for all you who are sick of porridge, well basically perfect for anyone, right? So please people, try it. It tastes the bomb, especially topped with the delicious fried banana. Mmmmmmmm, my mouth is watering while I am wirting this, says it all, right?
