After bombarding you with cake and cookie recipes over the course of the past weeks I thought a breakfast recipe would be appropriate for a change. I would also love to post savoury recipes, the only problem is, that I haven’t got any natural light to take photos at night and as I can’t really eat dinner at 3pm or prepare it in the morning due to a lack of time I can’t really post any savoury recipes at the moment. Luckily it won’t be winter for ever, so don’t worry, as soon as the days are getting longer again, there’ll be plenty of new delicious dinner recipes as I have got plenty of time to experiment right now.
So, back to the breakfast I want to share with you. Have you ever heard of Birchermüesli? If you’re Swiss you probably have, if not you would have been raised in a very remote time, because Birchermüesli can literally be bought anywhere. Also I am pretty sure that most Swiss people also make it at home fairly often. Even if you don’t happen to live in the country of cows, chocolate and watches (yeah, sure there’s nothing else here, you know…) , anyways, so if you don’t live here, you might have actually still heard of it as the recent health trend made other countries discover the delight of a deliciously creamy Birchermüesli.
The version I want to share with you today hasn’t got much to do with the original version by Doctor Bircher-Brenner, well it includes oats, other than that it’s pretty different, yet I still consider it Birchermüesli. As we are approaching Christmas I decided to go for a Christmassy version and for me there’s nothing more Christmassy than dates and walnuts. I don’t know if any other households do this but my whenever we went to my godfather’s house during Christmas time they had a plate of dates stuffed with walnuts standing on their table. Other than those to delicious ingredients I also added some vanilla, cinnamon and for ultimate creaminess coconut milk and my new favourite thing on earth the bestest nut milk ever: hazelnut milk by coop. You can obviously use any other brand hazelnut milk or substitute with almond or soymilk, but people, in all seriousness this milk is the best thing you’ll ever taste!
2 servings with fruit
- 1 tbs chia seeds
- 2 tbs oats
- 3 dates, chopped
- 1 tbs chopped walnuts
- a dash of vanilla
- ¼ tsp cinnamon
- 1tbs coconut milk
- 4tbs soy yoghurt
- 120ml hazelnut milk
Add ins:
- Fruit of your choice (for one serving I used 1 mini banana, ½ kiwi, 3tbs pomegranate seeds and 1 clementine)
- Add the oats, chia seeds, walnuts, dates, cinnamon and vanilla into a jar.
- Pour in the coconut milk, soy yoghurt and hazelnut milk,
- Stir up with a spoon, cover it with a lid and give it a final shake before placing it in the fridge over night.
- On the day you are having your bircher muesli, chop up the fruit of your choice and add to the bircher muesli base. If you decided to not add any fruit I suggest to have this as one serving.
Voila, that’s it. Birchermüesli is definitely a go-to brekkie , lunch or dinner for me as it’s just sooo tasty. Yep you read correctly, Swiss people also, actually mostly, eat Bircher muesli for lunch or dinner, at least, that’s what I grew up with.
