Hey there!
Breakfast, the first meal of the day, it gets me energised, it gets me going, it helps me survive long days at uni, terrible driving lessons, a shopping spree or just a day at home doing nothing. Isn’t breakfast just one of the best parts of the day? What would I even do without it? I would probably be asleep again as soon as I got to uni, I would certainly not manage to survive another driving lesson and I would most likely not even be able to enjoy a day off. I can hardly believe that I, Fanny, who used to be that girl who skipped a real breakfast because she couldn’t be bothered to get up a few minutes earlier, am saying this, but I love breakfast. Over the past months I have become a true breakfast lover and I have come up with numerous delicious new breakfast creations as you might have realised if you’ve been following my blog for a while. I mean I have indeed posted quite a few breakfast recipes recently.
To be honest I even used to be under the impression that breakfast recipes were completely over rated, I mean who needs a recipe to create a delicious breakfast, I mean we all know how to pour cereal into a bowl or smother some jam on toast. Well these were exactly my thoughts a few months prior to writing this post. I just didn’t get the hype about breakfast. Well no wonder that I was always feeling tired and sluggish at school. No wonder that I literally fell asleep at least a handful of times.
Over the past months I have become more and more experimental with my breakfast creations and I have actually come up with quite a few divine tasting creations, some of them being slightly more time consuming than others. Yet overall they are all prepared pretty quickly if you omit the part of making it look super fancy and taking a photo of it to then post it on your blog or Instagram. If I am writing this down like this, it kind of sounds ridiculous but that’s how it is, this is honestly my daily morning routine. Get up, make brekkie, decorate, take photo, eat, get dressed. Well and sometime in between those steps I usually also have a shower, brush my teeth and pack my bag. They’re busy my mornings, right?
Anyways if you are recreating this however you can totally omit the taking picture step and if you don’t care you don’t even have to take a photo yet I personally think that the eye eats first and that eating is just so much more enjoyable when the food looks amazing, but to each their own, so do whatever floats your boat. Whether you throw it all into a bowl or make it look pretty the main point is that you try this recipe.
This is it, the recipe that will revolutionise your porridge breakfast experience. Guys you need to toast the oats, it’s that plain and simple. Just heat up some coconut oil and add the oats, then let them become fragrant, continue with all the normal steps to prepare porridge and bam, there it is, porridge even more delicious.
As persimmons are in season I decide to create a persimmon coconut porridge, which makes the perfect start to any day, may it be a busy working day or a chill day at home.
- 25g quick oats (1/4 cup)
- 1 tsp shredded coconut
- 180ml water (3/4 cup)
- ¼ persimmon, chopped
- coconut oil
- 2 tbs soy yoghurt
- a dash of vanilla
recommended toppings:
- super ripe persimmon
- coconut chips
- Melt some coconut oil in a pan, you really don’t need a lot, I used approximately ¼ of a teaspoon.
- When your coconut oil has melted add the oats and toast over medium heat for about 2 to 3 minutes, stir continuously.
- When your oats have developed slight colour and the mixture has become fragrante pour in the water and add the chopped persimmon, shredded coconut and vanilla. Cook over medium heat for about 4 minutes until the oats have soaked up most of the liquid.
- Add the soy yogurt and stir it through.
- Pour your porridge into a bowl and top with the persimmon and the coconut chips. I also added some pomegranate seeds and pistachios to add some colour yet you could totally omit these two.
Voila, there it is porridge but better, thanks to one tiny little additional step!
As for now I can only say, this is delicious, you should try it, you’ll be amazed. That’s it guys! And also people don’t skip breakfast, get up 20 minutes earlier and prepare something delicious to get you going.
