Finally another recipe, though shame on me it is another sweet one. Well I’ve got an excuse. We keep having brunches and lunches and breakfasts at school since I’ll be finishing high school in two days. And also who doesn’t love cakes and sweet things. And if you want to see some of the savoury stuff I prepared during the past weeks, just check my Instagram, you’ll sure find some inspiration there. I promise I’ll soon post more savoury things again yet as for now we’re talking cake, actually banana strawberry chocolate bread – yumm!
This time I had to bake for a breakfast at school, so I decided to go with banana bread. I know I’ve already got a banana bread recipe on here yet this one is slightly different. I decided to add shredded coconut, chopped up strawberries and chocolate chunks to make this banana bread a special treat for my lovely Italian class. Other than that I obviously used some flour, the some oats, flax seed and agave as well as some baking powder.
The outcome was a truly delicious, super moist and juicy banana bread with a lovely hint of freshness which I achieved by adding the strawberries. The chocolate chunks I added brought the whole thing to the max of deliciousness and it was just a pleasure to eat this delightfulness.
- 60ml agave
- 60 g flour
- 50 g shredded coconut
- 40 g oats
- 100g strawberries (plus additional for decorating)
- 100g dark chocolate
- 80ml soy milk
- 3 ripe bananas
- 2 tbs flax seed
- 2 tsp baking powder
- Preheat your oven to 180°C
- Mash up your bananas, then add the soy milk and mix together.
- Now add the oats, flour and shredded coconut, mix well until the batter comes together.
- Now chop up your strawberries and chocolate and fold both under the batter.
- Add the batter to a lined baking pan and optionally some cut up strawberries on top of the cake, bake for approximately 25-30min or until a toothpick stuck into the middle comes out clean.
Voila, that’s it So easy and that is also what I love about vegan baking. Well you never have to make sure to add the ingredients in the right order since you haven’t got eggs or cream which could liquefy again if added to early or to warm. As I said, this was delicious and guys if you like banana bread and chocolate, you should so try this as soon as possible.
