Guess what, I’ve got another breakfast recipe for you. I just love breakfast especially on the weekend when I’ve got time to enjoy and prepare my favourite meal of the day. During the week however my breakfasts look rather plain and boring. I’m just not a morning person and I get up as late as possible, so no time for beautiful smoothie bowls and creamy nicecream. Last week however I got four days off because we had a long weekend due to a teachers training at my school so I had heaps of time to experiment with different breakfast ideas. One of the things I came up with during those four days was a delicious kiwi matcha nicecream layered with strawberry chia pudding. Yes N-icecream, not icecream, I do know how to spell. I guess I should probably quickly explain what on earth I am talking about since I doubt that each and everyone of you knows this term. For all you foodies out there who have already been enjoying nicecream for months, good on you, keep eating that yummy stuff and try my delicious matcha kiwi version.
So, nicecream, nicecream is basically frozen bananas which are processed in a food processor with some kind of liquid which turns your frozen nanas into an icecream like texture. So bananaicecream turned to nanaicecream, which was then shortened to NICECREAM. So there you go, that’s nicecream, thank me later for introducing you to this delight. Trust me the first time you try it you’ll be hooked.
As I mentioned this time I decided to make a green nice cream by adding kiwi and matcha powder to the obligatory frozen banana, which turned out to be absolutely delightful. I love green tea so I literally add matcha to anything yet if you happen to not enjoy it as much as I do you could totally skip the matcha powder and just go with kiwi and banana. And since it is strawberry season I also decided to prepare a strawberry chia pudding to go with it for which I just combined strawberries and chia seeds. If you like you could also add some additional sweetener such as agave, coconut sugar or stevia or by all means add regular sugar if you like. I personally just try to stay away from it on a regular daily basis since my skin reacts terribly whenever I eat too much whitesugar. But as always, do whatever feels right for you.
- 1 frozen banana
- 1 frozen kiwi
- approximately 10 small strawberries
- ½ tsp matcha powder
- 1 tbs soy yoghurt
- 50ml almond milk
- 1tsp chia seeds
- stevia/agave
- water
- The night before you’re planning to enjoy this breakfast chop up you’re banana and kiwi and freeze over night.
- Also chop up 5 of your strawberries and puree then add your chia seeds, mix and place it in your fridge over night to set.
- In the morning finely chop up the rest of your strawberries and add tot he strawberry chia pudding, if your chia pudding has become tot hick add a splash of water and mix well.
- Add your frozen bananas, kiwi, almond milk, matcha powder and soy yoghurt and if you like a sweetener of your choice to your food processor and process until your mixture reaches a soft ice kind of texture.
- now layer your nice cream and your strawberry sauce and top with whatever toppings you like. I added some of a pana chocolate raw goji coconut bar and bee pollen.
Voila you just learnt how to prepare one of the most delicious breakfasts which basically tastes like dessert yet is super nutritious for your body which is perfect to start off the day with a load of energy.
