Saffron Mashed Potatoes – a luxurious twist on a classic

Hey there!

 

Today’s recipe will be another one I cooked last Sunday. It will actually hardly be a recipe. I’d say it is more of an idea on how to glam up your food for the festive season. This is just a little change to a classic side dish but trust me your guests will be blown away and they’ll be praising you even days later for this amazing idea they would have never come up with.

 

Well I am talking about my delicious saffron mashed potato. The whole thing is so easily prepared, yet the end result is breath taking. I actually prepared this yumminess for my dad and he was truly amazed by it. He absolutely loved it and he reached out for seconds without a slight hesitation. My dad was obviously not the only one loving this dish I was quite impressed as well. You have got to know that I am actually not the biggest fan of mashed potatoes. I actually don’t really like them all that much. Nevertheless I wanted to make my dad a favour from who I know has a soft spot for some potato mash therefore I decided to make prepare this to rather dull tasting side dish. In order that I didn’t have to suffer through eating boring pureed potato I then decided to twist it up a little, that was when those lovely red threads entered my cooking session.

 

Besides saffron and potatoes I also added some milk as well as olive oil to make it a little creamier. I decided to go with olive oil since I personally think it enhances the flavour of the mashed potato even more.

 

So there you go the recipe for this amazing side, you should definitely be serving sometimes during Christmas season. Be it on Christmas Eve, on an Advent Sunday or just on an ordinary weekday during the best and fifth season of the year.

 

 

 

  • 1kg potatoes
  • 2-3 sachet of saffron
  • 1dl milk (you can also use dairy free milk if you happen to be vegan)
  • 2tbs olive oil
  • salt
  1. Peel your potatoes
  2. Boil your potatoes until their soft
  3. When your potatoes are ready add saffron and mash them until they’re smooth
  4. Then add the olive oil, your milk and salt then whisk until well combined

Voila, your delicious saffron mashed potatoes are finished. A find this to be the perfect alternative for ordinary mashed potatoes. You really only add one ingredient and the whole thing gets so much more exciting. I find the ordinary mash to be a rather dull dish this one however I absolutely love. I just think the saffron adds a lovely hint of luxury and is therefore a perfect side for the festive season. So if you want to fancy up your good old mashed potato I highly recommend this version. It is nearly as simple but tastes a hundred times better, what else could you ask for?

 

This is obviously a perfect side for anyone regardless of your eating habits. Whether your vegan, vegetarian or you want to serve it with meat or fish I would say it will taste delicious in any case. Though since my blog is a vegetarian one I have got some veggie serving suggestions for you if you struggle to find the perfect accompaniment for this yumminess.

So there is obviously my delicious vegan lentil porcini stew I served it with on Sunday, which I can only reccomend especially at this time of the year but I think it would also go perfectly with my vegan summer bean stew, the lovely quince and chestnut reagout I originally served with tofu or it might even work with my amazing lentil stew with a moroccan twist.
