A few days ago my dad mentioned his desire to eat Spaghetti Carbonara. We haven’t prepared this dish in our household for well over 6 months, because we reduced our consummation of animal products to quite a minimum. Of course we do use eggs and milk occasionally, however meat hasn’t seen any of our pans and dishes in a while.
Thanks to my dad’s mentioned desire I came up with a version of Spaghetti Carbonara, that is a hundred per cent vegan. Of course it is not the same as a plate of real cheesy and creamy Carbonara. Nevertheless I do think, that I came up with a reasonable alternative. It was delicious, creamy and surprisingly rich.
The ingredient I used to achieve a similar texture to authentic Carbonara was an avocado. I have read recipes where people used avocado to create creamy pasta sauces before. Therefor I decided to try it as well and so I came up with my delightful Vegan Spaghetti Carbonara.
You will need:
- 1 avocado
- 500 g spaghetti ( I used spelt spaghetti)
- 200 g smoked tofu
- 5tbs nutritional yeast
- 4 cloves of garlic
- 1 red onion
- 10 sage leaves
- ½tsp nutmeg
- salt&pepper
- olive oil
1. Dice the garlic, the onion, sage leaves and smoked tofu and bring the pasta water to a boil
2. In the mean time fry the garlic, the onion and the sage in about a tablespoon of olive oil, keep stirring for about 4 minutes
3. Add the tofu cubes to the mixture and fry for another 4 minutes, you should end up with a somewhat crispy mixture, put the mixture aside
4. Salt the boiling water and add the spaghetti, meanwhile scoop the avocado into a food processor
5. Purée avocado and add about a cup of the hot pasta water, you should end up with a custardy consistency
6. Add the nutritional yeast, as well as the nutmeg to the avocado sauce, mix it well, add salt and pepper to taste
7. When the spaghetti is al dente, add the avocado sauce and the garlic, onion, sage and tofu mixture to the spaghetti and toss until the sauce is evenly distributed
Voila, a hundred per cent vegan, a hundred per cent delicious Carbonara, enjoy!

Hi! I’m glad to have discovered your blog! It’s nice to see a swiss blog for once 🙂 i went vegetarian a few months ago, and I’ve seen recipes using nutritional yeast every where. Though I don’t know how it’s called in french…I’ve gone to coop and migros, trying to find it, but wasn’t successful…:/

Hey! I always get my nutritional yeast at organic supermarkets. Here, in Zurich, Müller Reformhaus sells it as well as the alnatura shop. Just check out your local organic shop, I’m sure you can find it there:)
