Hey there! Long time no see… I know I haven’t posted a recipe in here in for ever, however, this is mostly due to the fact that I’ve been so busy shooting and developing recipes for my book, which is going to be published this fall, so get excited for that one. So even though I have been writing tons of recipes recently I just didn’t get around to writing recipes for you, my readers, however, you’ll get 100+ new recipes in the book, so I guess that makes up for my lack of posts, am I right.

Long weekends call for brunch.

We are currently having a long weekend here so I invited my sister over for brunch and as I’m having a day off working on the book I decided to shoot today’s brunch creation. It is pretty simple and nothing special, basically a levelled up avocado toast. Instead of just topping my bread with plain avo I prepared a delicious spread and we also had some garlic asparagus on the side. Oh and did I mention that the bread was actually homemade spelt nut and seed bread, which was actually a recipe I tested for the book. Anyways, I’ve gotta run now and enjoy my day off.

Ingredients
  • Tahini Dip
  • 1 tbs Tahini
  • 2 tbs water
  • ½ Lime, juice
  • ¼ tsp salt
  • ¼ tsp Zatar
  • 1 tbs herbs, finely chopped (I used coriander and parsley)
  • Garlic Asparagus:
  • 200g asparagus, halved
  • 1 clove of garlic, crushed
  • olive oil
  • salt
  • For Serving:
  • Micro greens
  • Redd cabbage, finely sliced
  • 1 avocado, halved and thinly sliced
  • 2 slices of spelt bread
  • barberries
  • sesame seeds
Instructions
  1. In a small mixing bowl mix together tahini, water, lime juice salt, Zatar and the fresh herbs.
  2. Heat up some olive oil in a pan, add the whole clove of garlic and let the oil infuse with the garlic on medium heat for 2-3 minutes. Add the asparagus and sauté for about 5 minutes, season with salt. Remove the asparagus from the pan and toast the sliced bread in the remaining garlic oil.
  3. Spread spread some of the tahini spread onto the toasted bread and top it with the one avocado half. Garnish with sesame seeds, zatar and plate it up with the asparagus and some greens of your choice.
