Imagine if breakfast was already ready to be eaten when you get up in the morning. Sounds pretty great, right? So let’s prepare some overnight breakfasts.

Monday Morning, 7 o’clock. I want breakfast, right now, I gotta rush, my bus is leaving in 10 minutes. But I’m starving, yet there’s no time! Damn why does making breakfast take so long…

I bet this situation sounds way too familiar for quite a few of you. Who doesn’t know the the feeling of getting up way too late and then not having time to prepare a decent breakfast. Those mornings usually turn out terribly wrong, because starting off the day without a decent brekkie is just not fun.

That is exactly why you should prepare a bunch of overnight breakfasts to always have something to grab. This will also prevent you from spending unnecessary amounts of money on take-away bread rolls, bircher muesli or chia pudding. Today I will share my three favourite overnight brekkies with you. They’re all incredibly delicious. In addition, they’re super easy to prepare and only require a handful of ingredients. I’ve a brownie linseed pudding for you, a carrot cake chia pudding and last but least my blue lemon poppy seed overnight oats. Yummy! You basically just throw all of the ingredients into a sealable jar, mix, shake and then place it in the fridge over night. All of them will stay fresh for up to three days so you can even prepare them at the beginning of the week and have them ready to go for another few days.

Brownie linseed pudding

Ingredients
  • 2 tbs linseed
  • 150ml almondmilk
  • 1 tbs cacao
  • 1 tsp cacao nibs
  • 3 pecan halves, roughly chopped
  • ½ banana, sliced
Instructions
  1. Add all of the ingredients into a jar, stir until well combined and close with a lid. Let it sit over night.
  2. The morning after optionally top with additional toppings and sweeten with agave.

  • 150ml almond milk
  • 1 tsp raisins
  • 1 tsp cinnamon
  • 1 dash ground cloves
  • 5 hazelnuts, roughly chopped

  1. Add all of the ingredients into a jar, stir until well combined and close with a lid. Let it sit over night.
  2. The morning after optionally top with additional toppings and sweeten with agave.

    Love the idea of linseed pudding. Never heard of linseed before, but I def want to give it a try! And that colors of your blueberry lemon flavor are stunning!

    These all look delicious Fanny! I’ve been loving blueberry and lemon lately so will definitely try adding poppy seeds next time I have this flavour.
