Truffle Pizzoccheri with spring veggies, mmmm

Hey there!

 

Sometimes you just want to cook something a little more special. Sometimes you just don’t want to settle for plain old boring pasta with tomato sauce. You might want to impress a special someone or you just want to cheer up your roommate who has recently gone through a breakup or you just want to do someone a favour and surprise them with an extra special dinner. Well I guess my situation would fit in the third category. I just wanted to prepare a special dinner for my mum who is just in the final stage of finishing her master thesis.

What’s better to add to a dish than a hint of truffle to make it extra special? Unfortunately I can’t afford getting fresh truffle but truffle oil is definitely a great alternative. I got mine off DeinDeal.ch that actually has a great selection of gourmet foods such as different types of olive oil, teas, coffee, olives and loads of special pasta. I also ordered a batch of the latter as I spotted Pizzoccheri, a buckwheat pasta from the South of Switzerland, which I absolutely love. The products arrived at my house super quickly, just in time for the dinner I had planned for my mum. DeinDeal also has a great selection of products for your house, clothes and you can even get travel deals on there. But I mean I am a foodie, so of course I had to shop in their food section.

So when I got in the kitchen to prepare a special dinner for my mum I decided to incorporate both the Pizzoccheri and the truffle oil and create a completely new taste experience. I combined the Pizzoccheri with loads of spring veggies a dash of truffle oil and nutritional yeast to make it nice and creamy. I also decided to add a hint of spice by adding some pepperoncino. However, if you can’t handle spice you can totally skip this ingredient and it will be just as delicious. In the end I topped it with a sprinkle of nutritional yeast and also grated some of the pickled Truffle on top, which I also ordered form DeinDeal.ch. Anyways people I’ll stop rambling now and I’ll leave you with the recipe to this heavenly delight that will definitely impress you special someone, your sad room mate or your slightly stressed mum.

Ingredients
  • 2 Shallots
  • 1 garlic clove
  • 250g asparagus
  • 250g cherry tomatoes
  • 100g split peas
  • 10g nutritional yeast
  • 1tbs Truffle Oil*
  • Olive Oil
  • Salt
  • Pepper
  • Peperoncino
  • 150g Pizoccheri*
Instructions
  1. Finely chop up the shallots and the garlic. Cut the asparagus into 2cm pieces and half the cherry tomatoes.
  2. Let the pasta water come to a boil. Meanwhile heat up some olive oil in a pan and fry the shallots, onion and a dash of pepperoncino until the shallots have gone translucent. Then add the asparagus, cherry tomatoes and the split peas and let the mixture cook over medium heat for 12 minutes. By now the pasta water will have come to a boil and you can add the Pizzoccheri. The Pizzoccherri will be ready at approximately the same time as the sauce.
  3. When the Pizzoccheri are done add three tablespoons of pasta water to the veggies, then drain the pasta and add it to the veggies. Also add the truffle oil and the nutritional yeast. Mix well land let it cook over medium heat for another five minutes.
  4. Serve with a sprinkle of nutritional yeast and if you like some grated pickled truffle.

    Wowwie, I’ve never heard of Pizzoccheri before! I would LOVE to try it out because it looks wonderful!
