Hey there!
So I am going to keep it short today. I had a head of cauliflower sitting in the fridge that definitely needed to be used asap. However, I didn’t feel like roasted cauliflower, cauliflower soup and I also didn’t want to make a curry to which I usually tend to add cauliflower. I was actually feeling like something rather light so I decided to jump on the cauliflower “rice” bandwagon and make a salad with it that ended up being somewhat similar to a tabbouleh.
Before adding the cauliflower to the salad I quickly sautéed it and then added a bunch of cubed up veggies, sesame seeds, pomegranate, lemon juice, olive oil and some spices. That’s it. It literally only took me a couple of minutes to prepare this and it happened to be the perfect quick lunch on this Friday afternoon.
- 400g cauliflower
- ¼tsp garlic
- ½ pomegranate
- ⅓ cucumber
- ½ capsicum
- ¼ avocado
- 20g fresh parsley, finely chopped
- 1 tbs olive oil
- 2tbs lemon juice
- zest of one lemon
- 1 tbs dried oregano
- ½ tsp cumin
- ½ tsp harissa
- salt
- olive oil
- pepperoncino
- Process your cauliflower in a food processor until it reaches the consistency of rice. Make sure not to blend it into a puree though. Heat up some olive oil in a pan and add a sprinkle of pepperoncino, the garlic powder, approx. ½ teaspoon of salt and the cauliflower. Sauté for five minutes over medium heat. Transfer the cauliflower into a large mixing bowl. In the same frying pan toast your sesame seeds and put aside for later.
- Cut the cucumber, avocado and the capsicum into small cubes. Add the veggie cubes to the cauliflower together with the pomegranate seeds and the chopped parsley. Also add the zest of the lemon, lemon juice, one tablespoon of olive oil, oregano, cumin and the harissa. Mix until well combined. Transfer your salad onto a serving platter and top with the toasted sesame seeds.

I totally feel you when you can’t decide on making something between two different options. What can be better than combining the two, of course! This is such an amazing idea, and the pomegranate seeds, capsicum and cucumber look so beautiful on the salad!

Never tried out a cauliflower salad. I am not the biggest cauliflower fan. But I Need to check it out because i love simply meals and my hubby loves cauliflower. LOL. xoxo Janine

It actually tastes so delicious and the cauliflower flavour doesn’t really come through that much anymore by adding the right sipces 🙂
