Hey there!
It is the end of term already hence exams are coming up hence I haven’t got time for fancy breakfast creations on most days. However, I still want something delicious. filling and energizing to get me going for a day of studying. Whenever that happens I usually go for some kind of smoothie creation. You can make add anything to a smoothie and if you enjoy the ingredients you added on its own you’ll most likely end up with a delicious smoothie version, however, I recently came up with the most amazing version of a smoothie, the ultimate berry carrot smoothie. It is creamy, sweet, refreshing all at the same time. Yet it is filling and energising as well, just what you want if you are going to spend the rest of your day in the library reading and writing about English literature and linguistics. I know smoothies usually don’t make the most filling breakfasts, at least I feel like they don’t , however if you just add a tablespoon of chia seeds or linseed you imeditaely feel much fuller and you won’t be hungry again in like five minutes. I personally like to add the chia seed or linseed right at the end as a topping as I find that it adds an interesting texture, you could, however, also just add them before blending your ingredients. It will taste the same, just the texture will be slightly different. Sometimes I also top it with a couple of raisins or nuts, ,it really depends on what I feel like/ what I have on hand.
Anyways as I am actually supposed to be studying right now and I am using this blogpost as an excuse to take a little break I am going to leave it at this. So here you go, the recipe for my recently created ultimate berry carrot smoothie:
- 1 small carrot, chopped into chunks
- 50g frozen raspberries
- 50g blueberries
- 100g strawberries
- ⅓ cup coconut water
- ⅓ cup water
- ⅓ cup soy yogurt
- 2 soaked dates
- 1tbs chia seeds or linseed
- Add all of your ingredients but the chia seeds/linseed in your blender. Blend until smooth and creamy.
- When your smoothie is smooth and creamy pour it inro a cup and top it with the linseed or chia seed.
Aren’t smoothies so delicious, yet so easy to make? And you know what’s even better you can just pour it into a jar and then enjoy it on the way to uni, school or work. Yes, I am that weirdo who drinks smoothies out of glass jars on the bus..

I cannot wait to start making more smoothies! I’d probably find myself jamming as much spinach into a smoothie as I can next time I make them XD anyways, I would love to try adding carrots as well! So good for your eyes and skin!

Oh, I also love green smoothies, but sometimes I like mine without the greens as well:)
