Brekkie, brekkie, brekkie – Blueberry semolina porridge

Hey there!

 

And she’s back with another breakfast post… This blog has started out as a collection of all sorts of savoury meals I prepared and now there’s just breakfast, cake and more breakfast. Oh well, breakfast is the best meal of the day so nothing wrong with that. Today’s creation is a very similar one to one of my ordinary porridge recipes yet as I always get asked for recipes on Instagram I decided to still publish this. Hopefully one of you will actually care for this and otherwise I had some writing practice which is always a good thing. Anyways, the point of this post is semolina porridge, this time blueberry semolina porridge with the bestest topping ever: bananas fried in coconutoil, HEAVEN! I also added a bunch of other toppings, as always… I just like my toppings, you’re probably never going to see me having a plain bowl of oatmeal. Nope, I need that special something on top of my breakfast bowl. Trust me a few toppings make your brekkie not only look amazing but also taste even better!

 

Well, I am actually super tired right now, yet I really want to publish this blogpost tomorrow morning so I am just going to stop now and continue with the recipe.

 

  • 25g semolina
  • 120ml water
  • 60ml rice milk
  • 20g frozen blueberries
  • ¼ tsp vanilla
  • 1 small banana, sliced
  • coconut oil
  • 2-3 pecans, chopped
  • 1tsp chia pudding
  • maple syrup

 

  1. Add the semolina, water, rice milk and vanilla into a saucepan and let it come to a simmer. Make sure to stir continuously. When your semolina has come to a bubble, lower the heat to the lowest setting and let it simmer while you continue with the rest.
  2. Add some coconut oil into a frying pan and let it heat up. Add your slice banana and fry them over medium on both sides until lightly caramelised. This will only take a few minutes.
  3. Pour your semolina porridge into a bowl and top with the fried bananas, a dollop of chia pudding, chopped pecans and if you like a drizzle of maple syrup for some sweetness.

Voila, that’s it, another variation of my beloved semolina porridge. Delicious. That’s it no fancy descriptions for once, I am actually already half asleep right now, so any attempt in trying to get creative with my taste descriptions would porbably just end up being an incomprehensible chaos.
