The easiest and most delicious pasta – tomatoes, basil, garlic and olive oil!

Hey there!

Who doesn’t love some good pasta? Sometimes it is just all you want yet on those hot summery days we are currently having in Switzerland you wouldn’t really go for a heavy cream sauce nor one full of cheese and even a hot tomato sauce can be a tad to hearty in this heat. That is when I dig out one of my favourite pasta recipes, which I have literally been preparing over and over again for at least five years. Simple and few ingredients can sometimes be the key to the best and most memorable meals you’ll ever taste and this is definitely one of them

The recipe is incredibly easy and still it tastes absolutely amazing as it is made of the most delicious ingredients ever. Tomatoes, garlic, basil and olive oil, what else could you want? The key to this sauce is first of all some good quality ingredients so don’t go for the cheap olive oil, get your hands on some of the good stuff and only make this sauce when tomatoes and basil are in season other than that you can’t do much wrong but you definitely have to give the sauce at least thirty minutes of resting time before you eat it so the flavours can come together. It makes a difference trust me.

Anyways there’s not much else I can say about this recipe, I love it that is all.

for two people

  • Approx. 500g tomatoes
  • 1 tbs olive oil
  • 2 cloves of garlic
  • a bunch of basil
  • 120-200g pasta
  • salt
  1. Chop up your tomatoes in bite sized pieces. Add it into a bowl.
  2. Coarsely chop up your basil and finely chop the garlic. Add it to the tomatoes.
  3. Pour the olive oil to the rest of the ingredients and add salt to taste. Mix well so the flavours can come together properly. Put it in the fridge.
  4. After at least 30 minutes boil some water and cook your pasta until al dente. When your pasta is done, drain it and add the sauce to the cooked pasta. Mix and serve.

Voila, nothing creative, no special twist, not even a fancy ingredient, well I know the people who grow the olives for the oil I used but that is really it…

Sometimes even I like it simple and when you can get the best ingredients that is really all you need. In a perfect world I would have also made the pasta myself yet since I spent all day by the lake and I was starving till I got home I just couldn’t be bothered to stand in the kitchen for another hour.
