Hey there!
Today’s recipe will be another quick and easy breakfast recipe you can actually hardly call a recipe. It is much rather a food combination I just tried out and happened to be so extremely impressed with. As you might know if you have been following me for a while and most definitely if you follow my Instagram: I love nicecream!
I usually just mix in some acai powder, sometimes cacao and sometimes even some frozen berries. Yet the other day I spotted this very overripe lonely nectarine lying around in my kitchen. Since it was already rather late at night and I just didn’t feel like eating nectarine at that moment I decided to freeze it together with my bananas to then throw into my nicecream.
I actually forgot about having those frozen nanas and the lonely nectarine in my freezer yet this morning I remembered so I decided to go ahead with my experiment. I just chucked 2 frozen bananas, the lonely frozen nectarine, some coconut water and a sprinkle of stevia into my blender and blended it all up until smooth and creamy with a consistency similar to gelato or soft ice.
The outcome was just delicious. I ended up with this very creamy and sweet nectarine ice cream, which actually tasted a lot like the danone nectarine yoghurt I used to eat during my yearly summer holidays in Tuscany. I also ended up adding a few different toppings, yet those are totally optional.
Soooo anyways, I’ll just let you know the exact ingredients.
- 2 frozen bananas
- 1 frozen nectarine
- 1dl coconut water (you can substitute with any other liquid, such as almond milk, soy milk, regular milk, water…)
- some kind of sweetener stevia, dates, sugar, coconut sugar…
The toppings I used were:
- Bee pollen
- Red currants
- Raspberries
- Chia seeds
- Some dark chocolate
- Shredded coconut
- Chuck all your ingredients into a blender. Blend until smooth.
- If you want your nicecream to look like ice cream place it in the freezer for another 30 minutes after blending it up so it can firm up a bit. But you could also enjoy it right after blending it up.
- Top with your favourite toppings.
Voila, creamy nectarine nicecream.
So delicious, so creamy, so good! I personally think this is such a perfect breakfast for those warmer days we are now finally experiencing a tad more frequently. I find plain nice cream can be kind of heavy sometimes and by adding the nectarine you achieve this nice touch of freshness the perfect summer breakfast just needs to have. So please try this, I’m sure you’ll be stunned:)!
PS. I know I have been posting kind of a lot of sweet recipes recently yet I have been very busy due to my exams and I often don’t get around to actually write down all the ingredients I use in my dinners and I obviously want to make sure that my recipes are accurate.
