Guess what!! I’ve got another excuse to bake a cake, such a great feeling! This time I’m actually not baking for a friend’s birthday party nor a barbecue with my friends but for my class. Last week during my French class my lovely friend decided to send out a text to the whole class with a message concerning our last day of school. Unfortunately or better to say luckily I happened to be the one who didn’t have her phone on silent. In most schools this would have probably led to some kind of punishment such as detention. Yet in my school most teachers don’t really bother and you’ll most likely hear the whole class including the teacher say“ Kuuuuuchen”, which means cake in German and basically just tells you to bring a cake to the next lesson. Most times people don’t take this comment too seriously and you’ll never ever get to see a cake of that certain person who’s phone rang the other day yet since I am a dedicated baker and lover of creating new delicious cakes I take up every opportunity to do some more baking. So my answer to the obligatory “Kuuuuuuchen” – comment was of course: “ Sure I’ll bring a cake, I love baking” to which my French teacher added that I should please make one with the pretty flours like the one I posted on my blog the other day.
I actually didn’t put flowers on the cake as a decoration but I made sure to use some in my pictures. For this cake I actually decided to for once bake a super decadent chocolate brownie with a caramel “cheese” cake layer and a crunchy caramel almond topping as a finishing touch. The outcome of this baking session was again a total success and the end result was absolutely delightful. This is definitely a treat and very rich so after having a little piece you’ll definitely have had enough chocolate for the day. Chocolaty, caramelly, crunchy, just absolutely divine.
Anyways maybe I should just let you know the recipe to this delight. Oh and also I’ll soon be posting savoury recipes again though since I’ve been pretty busy with school and life in general recently I haven’t had time to photography as many recipes. Now I’ve only got two more tests at school and then only my final exams are left before finally finishing high school and getting my certificate in late June.
chocolate layer
- 200g ground almonds
- 80g flour
- 200g sugar
- 1tsp baking powder
- 200ml almond milk
- 200g soy yoghurt
- 200g dark chocolate
2tbs ground flax seed
50g cacao powder
caramel layer
- 250g silken tofu
- 2 tbs cornstarch
- 50 ml almond milk
- 80g flour
- 100g sugar
- water
caramel almond layer
- 100g sugar
- 50g almonds
- water
- Preheat oven to 180°C and grease a baking pan and dust it with flour.
- Ground your flaxseed and mix them with the soy yoghurt and put aside for later.
- Mix your dry ingredients with the flax seed soy yoghurt mixture and the almond milk while you are melting your chocolate.
- When your chocolate has melted pour the chocolate to the rest of the batter and mix well.
- Add the cocoa powder and mix again.
- Pour your chocolate batter into your greased and floured baking pan and put aside for later.
- For your caramel layer whisk up your silken tofu with the almond milk. Also add the cornstarch to 40 ml of water.
- Melt your sugar in a saucepan until it has slightly brown and it has reached a caramelly colour. When your sugar is ready add half of your tofu mixture to the caramel and mix well to cool down the caramel, then pour the caramelly tofu to the rest of the tofu and mix well.
- Add the dissolved cornstarch and the flour to your caramel tofu mixture and mix well.
- Pour your caramel mixture over your brownie mixture and take a fork and slightly mix the two layers so you get kind of a marbled look.
- Bake your brownie for 25 to 30 minutes in your preheated oven.
- When your brownie has finished baking let it cool completely.
- When your brownie has cooled completely cut it into equal sized squares and remove from the baking pan.
- Chop up your almonds and melt the sugar.
- When the sugar has melted add the almonds to the caramel and straight away pour the caramel almond mixture on top of your brownie squares.
- Let caramel harden. Then serve!
Voila! That’s done a delicious caramelly super chocolaty and moist brownie just delicious. I know I’ve already got a few chocolate desserts on here yet this one is most definitely the best one so far and you should definitely give it a try if you’re looking for a delightful tasting vegan brownie option.
