Hey there! This is going to be the third recipe of my breakfast series. After having two recipes being great for the warmer days I wanted to share one with you, which is a perfect start to the day on those cloudy and rainy days you’d much rather stay cuddled up under a blanket watching movies all day long. I absolutely can’t stand those days, the expression I hate it might even be appropriate in this case.. I was basically born to be in the sun, well I was born on a beautifully sunny day in the middle of Juno, so no wonder I detest the cold. Anyways although I’d prefer to live in a country where I’d never actually be in such a terrible situation I happen to live in Switzerland where the weather just doensn’t quite meet my expectations most days. So over time I’ve learned to work with what Iove got and the best thing to get myself started on those days I love to have porridge. I actually discovered this delicious morning treat in the country of surf, sun and beaches, yet terrible heating, hence I had to warm up in the mornings with a lovely bowl of uncle toby’s quick oats… Shame on me, but I haven’t always put so much effort in to my food. I used to just prepare ordinary porridge prepared with oats yet recently I discovered buckwheat porridge thanks to a Laila (@cleanfoxx on instagram) foodie friend of mine who posted a picture of buckwheat porridge a while ago. When I saw her picture I decided I also had to try this yumminess and I’ve been having buckwheat porridge ever since. My favourite way to prepare this deliciousness is a blueberry banana version with a dash of cinnamon and chia seeds. I also recommend using super ripe bananas so your porridge will be extra sweet and even more delicious. Recipe for one person
- 20 g buckwheat
- 100ml water
- 3tbs soy yoghurt
- 50g blueberries
- 1 banana
- 50ml almond milk
- 1tsp chia seeds
optional ingredients
- cinnamon
- sweetener of your choice (agave, maple syrup, stevia, sugar)
- pistachios
- bee pollen
- Chop up half of your banana. Put the other half aside for later.
- Add the water, the buckwheat and the chia seeds into a pan and let it come to a boil, then let it simmer uncovered for about 4 minutes.
- After 4 minutes add the almond milk, the blueberries and the chopped half oft he banana. If you want to also add a sprinkle of cinnamon and a sweetener of your choice this is the time to do so. Cover and let it simmer for another 4 minutes.
- Top your porridge with whatever you like. I used the other half oft he banana some additional blueberries, bee pollen and chopped pistachios.
Voila. You just prepared a delicious warming breakfast bowl perfect to get going on a rainy day. Creamy, sweet and absolutely delicious! You could even substitute with other fruit and prepare it the exact same way I have actually done this multiple times and it turned out delicious each and every time. Cheers from Australia
