Hey there!
This will be my second breakfast recipe, which is actually one of my absolute favourite foods at this stage. Sweet, creamy, refreshing, crunchy and just amazingly delicious. The Brazilians have actually been having this treat for years, well the key ingredient happens to be a berry growing in Brazil, so obviously they discovered this delight before the rest of the world did.
On this side of the globe however this treat has only just been discovered about one or two years ago and has ever since been THE breakfast bowl to instagram, tweet or repost on tumblr.
The first time I tried this delightful treat wasn’t until a little over six months ago, yet at that time I wasn’t aware of the fact how easily I could’ve just prepared this lusciousness myself. The place I tried it at is called Henrici, an adorable little coffee shop in the old town of Zurich. But as most Swiss coffee shops it isn’t all too budget friendly either. I mean 10 Swiss francs for a breakfast bowl, c’mon! Still I fell in love with this delight the second the I tried the first spoon full of it. Though due to its price and the fact that I obviously tend to eat breakfast at home not in a coffee shop I didn’t end up having another açai bowl for the longest time. I just couldn’t find out where on earth I could find frozen açai, later on I found out that one could actually just use powdered açai, well why couldn’t I have thought of that earlier…
I actually only found out about the existence of açai powder after asking Yasmin ( www.healthyyfood.com) another Swiss foodie who had posted a picture of a homemade açai bowl on her Instagram profile. She then called my attention to açai powder, which can actually be found at most organic food shops these days. Well when I finally found the key to having my homemade açai bowls I obviously had to get some of this powder asap so I could finally after such a long time have another bowl of goodness. Ever since I’ve been having açai bowls. Most times I eat them for breakfast, sometimes for lunch and on the rare occasion I’ll enjoy one for dinner.
The other ingredients but the açai powder are actually rather basic and can be found at any supermarket. I just add a frozen banana, which I always freeze the day ahead, frozen berries, almond milk and sometimes I like to add some cacao powder for some chocolaty goodness. Then at the end I obviously add lots and lots of yummy toppings, which vary everytime. Sometimes I add fruit, sometimes granola, nuts, really whatever I’ve got sitting around in my pantry.
I’m sure there’s already tons of açai bowl recipes on the Internet yet I still wanted to share my way of preparing it and if you happen to have never heard of this delight you now even get a recipe so you can experience the lusciousness of an açai bowl yourself.
- 1 frozen banana
- 100g frozen berries (I used cherries, blueberries and blackberries)
- 150 ml almond milk (any other liquid works as well)
- 1tbs açai powder
- ½ tsp cacao powder (optional)
optional toppings
- fresh fruit
- granola
- nuts
- dried fruit
- bee pollen
- cacao nibs
- chia seeds
- Add the frozen banana, the frozen berries, almond milk and your açai powder as well as your cacao powder into a blender and blend until smooth and thick. Your mixture should end up being slightly thicker than a smoothie and a little thinner than Italian gelato.
- Pour your delicious açai mixtur in to a bowl and top with whatever ingredients you like.
Voila. So easy, right? I just love how quickly such a delicious and beautiful looking breakfast can be thrown together. This is honestly one of things to eat right now. I love the slight crunch of my chosen topping with the smooth ice cream like açai mixture. Just delicious!
