As you might know I am still a student, I am actually in my last year or as a matte of fact in my last 10 weeks of high school, well afterwards I’ve still got exams for quite a few weeks but still…
So since I am a student I obviously eat lunch at school hence I either have to settle for our not so tasty canteen food (I have to be fair though, they’ve improved a fair bit over the years) or I bring my own lunch, which is usually what I go for.
I just recently discovered those extremely practical jars, called Weck jars. They’re the perfect size for a one serving lunch and you don’t even have to do any additional washing up since you can just chuck all your ingredients in your jar and then shake it all up.
I like to fill my jars with all sorts of things. I love bringing a Birchermuesli in my jar or I bring salad, couscous, pasta, whatever really. A super yummy salad I just prepared recently was actually a potato salad. Though I didn’t stick to the ordinary recipe with a heap of mayonnaise instead I made a balsamic vinaigrette, which made it a whole lot lighter and in my opinion also a lot tastier. Well but that’s just the odd me who doesn’t particularly like mayonnaise.
Anyways the salad turned out so yummy that I wanted to share the recipe with you. The ingredient list is super short and you’ve probably got all those ingredients on hand already, so you don’t even have to run to the grocers prior to making this, bonus, hey?
Besides potatoes I also added some cherry tomatoes and olives. Then the dressing was just mustard, balsamic, parsley, lime juice and a little salt and pepper. If you want to you could also add some olive oil, since I like my salads really vinegary though I decided to skip this step. But honestly feel free to add oil.
- 3 boiled / baked potatoes
- 4 olives
- 5 cherry tomatoes
- a little fresh parsley
- 1 tsp mustard
- 1-2tbs balsamic vinegar
- 1tbs olive oil (optional)
- salt
- pepper
- ½ lime ( juice)
- Get all your ingredients ready to be filled into your jar. So chop up your olives and parsley, also cut your cherry tomatoes in half.
- Pour the balsamic vinegar into your jar; add the mustard, the juice of your lime, the parsley, olive oil and salt and pepper.
- Now also add the olives and the cherry tomatoes as well as the potatoes ( I just peeled and crumbled them on top)
- Last but not least seal your jar and shake until all the ingredients are well mixed.
Voila you just prepared a super tasty one serving potato salad in a jar. What a perfect meal for on the go! I’m honestly obsessed with putting my food in jars, it is just so handy.
And don’t they say putting food into plastic containers isn’t the best, so glass is probably better for you. But oh well, that’s not really the reason for me using those great jars. I honestly just started using them because I thought they looked cute yet after actually taking them to school I discovered how incredibly practical they were. Anyways this post is about my delicious potato salad not Weck jars. So back to the salad this salad was honestly one of the best potato salads I’ve ever had.
By adding the lime juice and tomatoes you create an extremely fresh flavour, which makes the salad appear really light, yet it still fills you up du to the potatoes to help you survive an exhausting afternoon at school or else an afternoon at work.
