The recipe I’m going to share with you today has actually been created about two weeks ago but I just haven’t got around to write it down so far. Right now I am up in the mountains in the canton of Valais in a lovely little town called La Tzoumaz. After reading half of the day then going for a walk in the 50 cm high new snow I thought it would be the perfect time to finally sit down and write the recipe to bake this delicious yeast free focaccia I prepared a couple of days ago. If you’ve ever made an ordinary focaccia you’d know that it takes quite a while since you’ve got to knead your dough and then let it rise for a while. This one however doesn’t contain any yeast hence there is no rising time. So you really only have to throw all your ingredients together, knead it and then your dough is already ready to go into the oven. I topped my focaccia with some thinly slices red pepper as well as some pistachios. Yet if you haven’t got those two ingredients around you could easily substitute them with something else. I think olives and tomatoes would be a perfect combination as well or if you prefer it to be simple just top it with a few sprigs of rosemary and some sea salt and you’ll surely end up with an amazing tasting focaccia.
I’m just going to give the recipe for my version. Since I like it spicy I also added some pepperoncino but again you could totally leave this out if you don’t like spicy food.
So there you have my recipe for this delicious yeast free focaccia.
- 400g whole wheat flour
- 4tbs baking powder
- 300ml water
- 30ml oil
- 2 tsp salt
- 1tsp pepperoncino
toppings:
- sea salt
- pepperoncino
- 30g chopped pistachios
- 1 sliced red pepper
- olive oil
- semolina
- Preheat your oven to 200°C
- Mix your whole wheat flour, baking powder, water, oil, salt and 1 tsp of pepperoncino until it forms a dough ball. I used my Kenwood kitchen machine so the dough was literally done in a minute or two you could obviously do this step by hand if you haven’t got a kitchen machine to help you
- Line a baking sheet and cover it with some semolina
- Flatten your dough to a bout 1cm thickness on a lined baking sheet
- Now brush your focaccia with olive oil, stick your pistachios and red pepper slices on top of it and sprinkle some sea salt as well as some additional red pepper flakes on top
- Bake for about 25 to 30 minutes in your preheated oven
Voila, finished is your delicious and amazingly simple and quickly prepared focaccia. This is perfect to serve alongside an aperitif if you’ve got guests over. It literally only takes about five minutes to throw together and while it is baking you can even prepare some hummus to go with it. I’ve actually got three hummus recipes on my blog, which are all ready in less than thirty minutes so the perfect addition to this spicy and extremely tasty focaccia. So whether you’ve got guests coming around or you just want to serve some delicious freshly baked bread for dinner tonight I guess you should be putting your apron on right at this moment and start the baking.
