1 tbs herbs, finely chopped (I used coriander and parsley)
Garlic Asparagus:
200g asparagus, halved
1 clove of garlic, crushed
olive oil
salt
For Serving:
Micro greens
Redd cabbage, finely sliced
1 avocado, halved and thinly sliced
2 slices of spelt bread
barberries
sesame seeds
Instructions
In a small mixing bowl mix together tahini, water, lime juice salt, Zatar and the fresh herbs.
Heat up some olive oil in a pan, add the whole clove of garlic and let the oil infuse with the garlic on medium heat for 2-3 minutes. Add the asparagus and sauté for about 5 minutes, season with salt. Remove the asparagus from the pan and toast the sliced bread in the remaining garlic oil.
Spread spread some of the tahini spread onto the toasted bread and top it with the one avocado half. Garnish with sesame seeds, zatar and plate it up with the asparagus and some greens of your choice.
