Mix together Dates, spelt flour, maple syrup, ground pecans, coconut oil, orangepeel, salt and gingerbread spice. Knead it into a smooth dough. Wrap the dough in cling film and place it in the fridge to rest for 30 minutes.
Preheat oven to 180°C and roll the cold dough into equally sized balls. Press one pecan half into each ball and bake the cookies for 15 minutes.
